My player needs to do stealth or search checks his DEX= 17 and INT = 12
How practically I can do those checks and know if they succeeded or not?
How do the mechanics work, dice rolls and all?

First the DM needs to decide the DC (difficulty) of the check. Usually 5-10 for something easy that a normal person could do, and 10-15 for medium that takes a small amount of skill but is possible if lucky, etc.
Next the character making the check rolls a d20 (20 sided die) and adds any modifiers. In the case for stealth, you add your dexterity modifier (modifiers are score minus ten divided by 2 rounded down, so 17 DEX has a mod of 3) and proficiency modifier if you are proficient in the type of check you are making (proficiency mods increase with level, and can be added twice if you have expertise, etc. Multiple proficiency sources don't stack only highest is applied). So for example if you are level 4 with proficiency in stealth, you would add 5 (3 for DEX, 2 for proficiency) to your d20 roll and compare that number to the DC number, if it is equal or higher, you succeed.
If you are using the dndbeyond character sheet, then each skill is listed with a bonus number (starting with + or -). You add this number to a roll of d20 to try and roll at least the DC (difficulty challenge) number set by the DM.

But I did read the rules and didn't understand the roll D20 and the adjustments.

basically get a 20 sided die add the things you need to add (in this case ability mods which are 3 for the stealth check and 1 for the int check)
then if it over the number required to beat the check you beat the check
