Can a multiclass Druid/Sorcerer use Subtle spell while in Wildshape to cast spells from their Beast form?

No because the first part of the third bullet point of Wild Shape is "You can’t cast spells," while transformed. It's not that you can't cast spells because you can't speak or do somatic components - it's straight up: you can't cast spells while in Wild Shape. This is waived as part of the Druids 18th level feature Beast Spells.

Again - no. This time because while you are shape changed or polymorphed - your game statistics are replaced by that of whatever you are turned into - you literally become that thing and stop being whatever you were before - which means you're no longer a Sorcerer/Druid - you cannot use sorcery points - you no longer have metamagic - or even access to spells and so on (unless what you turned into has those).

This is incorrect. Shapechange has the Wild Shape exception: "You retain the benefit of any features from your class, race, or other source and can use them, provided that your new form is physically capable of doing so." It also lacks the Wild Shape rule banning spellcasting. This means while under Shapechange specifically, you retain all spellcasting, and the only thing stopping you from casting in general is your potential inability to provide spell components. Subtle Spell would remove any concerns about V and S components, although M components would still be potentially necessary, depending on the spell.
Oh fair enough - I should have read further. I got as far as the second paragraph which says "Your game statistics are replaced by the statistics of the chosen creature," which is general for - you're that thing now and not the thing you were.
It works with shapechange, though as a level 20 druid you won't need subtle spell anyway. And you would need to be level 20 multiclass anyway to have shapechange and metamagic, so might as well not do that.
