I was just thinking about how illusions work, and I thought: I already know (or have decided) that illusions can create the illusion of light, but not really create light. But what about darkness? All it would really be doing is filling the entirety of the area of, say, silent image, with the illusion of a completely black cube, inside and outside the area. Would it essentially function the same as darkness, but without the light-dispelling?

Spells like minor illusion and silent image can absolutely be opaque. It's one of their primary benefits.
While it should work according to RAW keep in mind that a sudden appearance of a 15 foot cube of darkness may arouse suspicions. Most monsters have low intelligence so you'll probably get away with it most times.
Since the illusion can be as big as 15 feet cubed, which is roughly the size of Huge creatures, and you can move the illusion around. Why not make it a creature and stay inside the 15 foot cube. You can use your bonus action to move it around as you use your movement to stay inside it. This leaves your action to attack or cast spells.
If you make the illusion of a dragon and cast Burning Hands you could make it look like the dragon is breathing fire. From a distance the evidence of the damage and burning things caused by Burning Hands would make it hard to disbelieve.

I think you missed the point. The point of casting an illusion spell this way is basically just trying to make a down-leveled version of the darkness spell. And, and,, such a casting of an illusion spell would only draw the same amount of suspicion and attention as darkness.
