I will start by saying I am not sure if this belongs here or in the homebrew section of the forums. I apologize if I am posting in the wrong location.
My idea is a simple one and this whole post could easily be a "Just talk to your DM" kind of solution.
I wish to take the item. Prosthetic Limb and theatrically say that a gunslinger/ other fighter class character uses said item as not only an arm but also as a gun. The arm shifts and changes depending on the type of weapon the user wishes to fire at the time like a pistol round or a rifle round. It would take the same amount of time as anyone grabbing a new weapon for their turn. Ultimately, could/would this work?
Look up the "armblade" as a reference to build this item. The build should incorporate similar features and limitations, and probably add in more restrictions (so as not to take away form the Warforged). It might be better to have outlined your design before you talk to you DM about its use. It would also help if you make this tie into your character's design so it doesn't sound like you are adding in an item that any NPC or PC can use.
Great idea. For clarification I was thinking of how Iron Man launches those blasts from the palms of his hand but instead of energy it's just the bullet. I get what you mean though. Thanks!
It seems like what you want is something similar to a Armblade/Wand Sheath that works with ranged weapons and rotates them out, and can be embedded into a Prosthetic Limb. (I've always found it odd you can't do this RAW). I see no reason this shouldn't work, although I would limit it to two one-handed weapons. I just created a version of it here. Of course, as with any homebrew, it is up to your DM if you use it, as it is strictly more powerful than a normal Prosthetic Limb. I, however, do not believe it would make a large difference in power level.

I write homebrew and don't publish it. (evil, I know)
One issue with this is you can't really lose it, so that makes it a little more powerful. You can't be disarmed, can't have it pickpocketed, etc. It's vanishingly rare that someone would try to disarm a character, anyway, so its more a theoretical problem than a real one. Unless you get taken prisoner, which may happen, campaign dependent.
If I were your DM, I would also say you could choose one weapon or another, not toggle between two different weapons. And, as Kthunk says, hand use can be an issue. If you wanted to use it for a two-handed weapon, I'd say you need to use your other hand, as well when you fire it. Maybe the barrel is longer, so you need your other hand to help steady your arm or something. Just don't try to use a two-handed weapon with one hand. And you would still need any other properties to be consistent with the base weapon, loading, ammunition, etc.
Yeah I have always used the second hand as a kind of "support" for the fake arm gun when shooting it as a two handed firearm. The disarmed or pickpocketed thing is not really an issue ever anyway. I have never met a DM that actually tries those things over straight damage to a player, PERSONALLY. But there is always that one person who tries that out of the box tactic!! The other plan I had was having a fake arm for each different weapon. So a fake arm for the rifle, one for a pistol, one for a mortar. Since you can willingly drop the fark arm whenever you want I figured it was basically the same as switching weapons that way.
As far as loading and ammo goes, GUNNER/Firearms Expert take care of that issue. One bullet is all one needs! ^_^
so you would essentially be keeping a literal quiver of arms? That's kind of cool, but getting multiple of the item could be difficult: you should absolutely talk to your DM as to if/how you can obtain/create multiple of them.

Since it is a prosthetic limb, I assume that it can literally be dis-armed - hitting the arm or its fastenings in just the right place to remove it from the attached torso.

Nope, not by the rules of the Eberron item. Of course, that also limits his ability to switch arms.
You can detach or reattach it as an action, and it can’t be removed against your will. It detaches if you die.

Why does it limit the ability to switch weapons when you can do it at will?

In my understanding, the plan was that each arm was going to have a different weapon attached to it. So if the arms each take an action to reattach/attach, that's two actions to change weapons.
