So, am I just not seeing it, or are mechanics for Airships missing in both Eberron: Rising from the Last War AND Wayfinders Guide to Eberron, despite Airships being kinda iconic to the setting?
Why would you need rules for an airship. It’s an airship. Like a regular ship but with a big balloon attached. Or with out a balloon then it’s a ship that flies in the air. I just don’t understand needing rules for that. :/

Well, an airship would have different parts, speeds, and movement types to name a few things. Probably no paddle speeds I'm guessing. And all ships are going to need a means of flight which will need AC and HP as the ship will fall without it. Plus, it is eberron, they probably have different weapons on airships.
Eberron airships a not like the airships from other planes. Which means that they would have different layouts. If a fight breaks out on an Eberron airship we would need the map of it to play the encounter.
You could. You can also make your own classes and rules, but most people prefer to use the official ones.
An official airship map would allow us to know the layout the of airships, so we could design our own airship based of the layout the of the official airships.
I guess I prefer making my own maps and encounters. I would never need official rules on what an airship looks like. I would draw it and design it myself. If you mean you need rules for rule mechanics of the ship like roll DC13 to figure out how the turn the ship, what the damage on the weapons would be yeah that should be in books. But maps common make it your own and designed it yourself. I guess that’s just me.
Yeah, I personally need maps a lot more than I need detailed mechanics! At this point I think I understand the ruleset well enough to improv mechanics as needed - if I need to figure out how many and what kind of rolls you need to turn a ship, to avoid storms, to navigate, what appropriate damage and to-hit values are, etc, I can do that.
I've got no artistic talent though so I can't really draw good maps, I'll take any playable maps I can get!
What are you imagining in terms of a good map? And more to the point, what does a map need to be for your game to progress as you and your players expect it to?
If it's purely functional for placing miniatures and deciding where the line-of-sight would be, you could just pencil it out on graph paper and then ink it in with a marker.
I was really hoping for stats for airborne vehicle combat, details on binding elementals and how to break a bind, number of crew required, etc. Descent into Avernus gives great detailed stats for Infernal Vehicles — I assumed we’d get the same from E:RftLW. Ditto the Lightning Rail, although we at least got maps of the cars for that. I mean, something as simple as the effect of dropping a Fireball in front of one of these would be useful. I guess, as above, the Saltmarsh vehicles will have to do, but I shouldn’t have to buy that in hopes of adapting it to Eberron, and that still doesn’t give me aerial combat rules for them.
I guess here’s hoping a forthcoming adventure will give us that info, like Saltmarsh & Avernus did, so I can just buy the vehicles from it.

They are not in those books. The only airships released so far were in the Acq Inc book.
You didn't miss it. Seems WotC skipped out on that subject.
How strange.

Not gonna lie, I was expecting stats and/or maps for airships and trains. Oh well.

And some people prefer to use their imaginations. But I am not going to fault you for playing the game the way you want to.

I was hoping to see airship stats but I'll just use Saltmarsh ship stats then

In terms of maps just Google "Eberron Airship layout".
There's quite a few from 3.5 days.

There are basic airship stats in the DMG. Just use and/or modify those.
