Is it possible to wield a Maul or Two handed sword with one hand should you take a potion of giant strength or have a belt of giant strength....aka super human strength. Clearly giants can based on their strength and I also have Great Weapon fighter feat...
I'm sure its probably up to your DM but I don't have DM, I usually play adventurer's league or the like....
I would like to use the free hand to add a small shield for AC improvement.
Unless something says otherwise: no. You still need two hands to use a two-handed weapon. It's not actually just about strength, the size ratio between you and the weapon is also a factor in order to hold and move the weapon effectively otherwise you lose momentum and grip.
As usual DMs can overrule and Adventurer's League game have DMs, so talk to the DM.
Personally I would not allow it, two-handed weapons are designed to require two hands as a balance mechanism - you're trading the lack of shield for more weapon damage. I'd be fine if you wanted a giant sword for the thematics of it - but that sword will have the stats of a one-handed weapon.

You probably could swing a Two Handed weapon with one hand with sufficient strength, but by doing so you'd be using it as an Improvised Weapon (the same way that you can swing a bow at someone) rather than in the way it was designed to be used. Whether your DM would rule that your Improvised Weapon (one handed Maul) still "resembles" a Maul, or a Club, or just a base d4 IW, that's really up to them. But once your DM answers that question, it might be useful to be able to switch back and forth between offensive (two handed) and defensive (IW and Shield) stances, in the same way you can do with a Longsword.
Think of it like a baseball bat. Yes just about anyone can swing it with one hand but you won't have the accuracy and control to be able to make any type of contact, Not to mention you need the extra hand to be able to drive into a larger object. I'd allow someone to use it as one handed, but only have damage as an improvised weapon.
I would say it would still be a matter of physics. A 5' 6" elf that only weighs 106.3 pounds could have all that strength but it would still throw them off balance.
The key word in your sentence is Giant. Giants are bigger than typical people, thus their weapons are designed differently than a humans for their size. Now if you were under the effects of an Enlarge spell with the Belts of Giant strength equipped, I'd say sure.
You add weapon property Versatile and ignore weapon property two-handed. It's the way to create those crazy anime style weapons. Which is also why they are only found in homebrew.

My question is why does a 35 to 45 pound halfling gets to use a great weapon with two hands with a 13 strength but a 7’ to 8’ 300 + pound firbolg or Goliath can’t use same said great weapon one handed ?

As many have pointed out, weapons don't weigh that much. The heaviest melee weapon, a maul, is only ten pounds.

There is not a method in the books to do it, so it wouldn't be allowed in AL. It would have to be homebrew.

You could do it in previous editions. It involved a few feats to get to it.

Which makes no sense. Versatile means 1 or 2 hands, two-handed means only 2 hands. The 2 properties should never coexist by definition.
Many homebrewers have a poor grasp of the rules. This is just an example of that.
Yea - Versatile and Two-Handed are mutually exclusive by definition.
