Though I'm curious why they have a climbing speed of 25 and not a swimming speed of 25 being an amphibious creature. Was that determined to be unbalanced?
My understanding is that the Grung are based on tropical tree frogs, specifically something like a poison dart frog. While tree frogs are able to swim just fine, they are much better climbers than they are swimmers. So that would track that the Grung would have a climbing speed rather than a swimming speed.
I do have my own question... I've been considering buying the race. I found the rules published on some forum or other, and it had the optional rules regarding their poison ability, where the different colors had different debilitating effects that were applied on a successful hit with Piercing damage. What's the deal with that? Is it a real thing, or was that homebrew? Or is it something a given DM may allow, while a different DM would not?

It's also worth noting that technically speaking the Grung as a playable race was designed to raise money for charity rather than an official publication, and as such are considered somewhat unofficial compared to others; because of that, they were designed more around thematics and fun rather than balance, and aren't really meant to be played in most campaigns (though it's entirely a DM's prerogative one way or the other).
Grung deserve a book publication, with a few tweaks and rewording of their abilities.
The history of the 5e grung could use some spicing up as well. Earlier editions went more in depth.
I envision them as being less stereotypical wild pygmy types and more themed after early central american natives. Human sacrifices, zigguuarts, and such...I'm trying to think if DnD has a race similar to this? Something is scratching at the recesses of my brain.

If my character is a Grung and I take the Feat Grappler, I would gain advantage on attack rolls against a creature I am grappling.
Would the poison save come before the grappling check? If he were poisoned first, his ability check to defeat the grapple would be at disadvantage.
Since the grapple only requires one free hand, could I then use the other to administer piercing blows with a poisoned dagger at advantage?
Grappling
When you want to grab a creature or wrestle with it, you can use the Attack action to make a special melee attack, a grapple. If you're able to make multiple attacks with the Attack action, this attack replaces one of them.
Using at least one free hand, you try to seize the target by making a grapple check instead of an attack roll: a Strength (Athletics) check contested by the target's Strength (Athletics) or Dexterity (Acrobatics) check (the target chooses the ability to use). If you succeed, you subject the target to the grappled condition.
You can use your action to try to pin a creature grappled by you. To do so, make another grapple check. If you succeed, you and the creature are both restrained until the grapple ends.
A restrained creature's speed becomes 0, and it can't benefit from any bonus to its speed.
Attack rolls against the creature have advantage, and the creature's attack rolls have disadvantage.
The creature has disadvantage on Dexterity saving throws.
Poisonous Skin. Any creature that otherwise comes into direct contact with your skin must succeed on a DC 12 Constitution saving throw or become poisoned for 1 minute.
A poisoned creature has disadvantage on attack rolls and ability checks.
You can also apply this poison to any piercing weapon as part of an attack with that weapon, though when you hit the poison reacts differently. The target must succeed on a DC 12 Constitution saving throw or take 2d4 poison damage.

The save would come after the check for the same reason it comes after the damage roll if you stab the target with a dagger. Before the check is made you haven't touched them yet, and you can't interrupt the check to make the save - since they have to be done in some sequence, the sequence is resolve the attack, then resolve riders.

Yes, you could stab the target with a dagger.
You would make a flat roll:
If you grapple and then attack, no rule applies advantage or disadvantage.
If you grapple and then pin and then attack, you and the target are both restrained, meaning you have advantage (from a restrained target) and disadvantage (from being a restrained attacker), which adds up to a flat roll.
Poisonous Skin. Any creature that otherwise comes into direct contact with your skin must succeed on a DC 12 Constitution saving throw or become poisoned for 1 minute.
For RP purposes can my grung character be hugged? In other words can she choose not to poison someone? Or is this something that will happen no matter what?

You're probably thinking of the Yuan-Ti. There's a playable version in Volo's Guide to Monsters.
