The spell doesn’t say, so I would argue it would either extend into the earth/walls on either side and technically remain a 10’ dome, or (if I were being tough) rule that it would fail as there isn’t enough room to cast it.
This would seem to be one of those grey area DM discretion things. Personally, I'd say it pushes the earth out of the way in all directions as it forms, but then when it expires I'd have the displaced earth cave in, since the dome is no longer supporting it. But I can also see the case where the dome forms without changing the tunnel at all, with some of the internal space obstructed where the tunnel was smaller than the dome -- either without affecting the ceiling, or by separating it from what's above and making it fall to the ground.
While I would disagree with the idea, I can also see some DMs saying that the spell simply fails because there's not enough space.

Congratulations, you've just turned a simple utility spell into a literal wallbreaker with that ruling. Cast Tiny Hut in a small gap in the town wall, watch a section of wall collapse when you dismiss the spell.
For real though, Tiny Hut is a fragile spell, and if you try to cast it where there are more people (or larger people) than can fit inside it, the spell fails. As such, casting it where it can't fit sounds like it would break the spell. On the other hand, objects that are present in the area of the dome when you cast it can move through it freely, so the cave wall can "move" freely through the dome and is not repelled by any effect of the spell.
Nine creatures of Medium size or smaller can fit inside the dome with you. The spell fails if its area includes a larger creature or more than nine creatures. Creatures and objects within the dome when you cast this spell can move through it freely.
I've decided to apply the line-of-effect idea from the spell rules section. The hut can only form as far as it can reach (as part the general spell rules) along its maximum radius in each direction, so it would fit along the edge of the tunnel walls.
A spell's effect expands in straight lines from the point of origin. If no unblocked straight line extends from the point of origin to a location within the area of effect, that location isn't included in the spell's area. To block one of these imaginary lines, an obstruction must provide total cover.

It’s a 3rd level spell, so it’s powerful, and it’s a non damaging spell. When I’m the DM if one 9f my players tried casting it in a tunnel that’s too small I’d make it smaller so that it filled the available space and fewer people can fit in it. That’s not RAW, but I’d let it work that way anyway.

Yeah, the spell is incapable of altering anything, so there's absolutely no "it breaks through walls/ceilings".
