You could make an argument for why it might, but I don't think the fact that you can see in the dark would prevent the creature from becoming invisible in darkness or dim light, which devil's sight does not circumvent. I would say you're better off using a light spell or some other way of ending the darkness/dim light where the shadow mastiff is. Or just light a torch because it does not have ranged attacks and approaching you would put it in bright light, thereby ending its invisible condition.
It's funny that you mention the Gloom Stalker's umbral sight, because it was brought up as a talking point erroneously by me before I had fully rtfm and did nothing but further derail the discussion about Shadow Blend. We had correctly concluded that it would work against devils but not warlocks, which seems to be a more common question.
Based on the wording, the Shadow Mastiff's ability would still work fine. The ability only says that it can be used when the Mastiff is in dim light or darkness, it says nothing about whether it's being perceived. Your ability to see in darkness, even with Devil's Sight, doesn't mean the darkness isn't still there. You've got night vision goggles, not a flashlight :)
Yes: the mastiff becomes the same as darkness, thus devil sight treats it as if it isn’t there. This would technically make it invisible to devil’s sight.
No: The mastiff relies on the darkness to conceal itself, thus if the darkness doesn’t appear to someone’s sight then the mastiff can’t be concealed.
another question, how do blindsight, truesight, and tremorsense get adjudicated for the shadow mastiffs?
as for the guy above me, devil’s sight isn’t dark vision nor is it like night vision goggles. It effectively makes it so there is no significant change between turning a light in a dark room on or off, the character still sees “normally.” This includes color and contrast. This is technically better than a flashlight, as a flashlight would cast shadows.

You're taking my metaphor far too literally. The point was that Devil's Sight doesn't add light, it merely lets you see through the existing lack of light. So an item in darkness or shadow would still be in darkness or shadow, it's just that the darkness/shadow would not impair your ability to see it. And the Shadow Mastiff's ability to become invisible(which is something different than merely being hidden or obscured) does not rely on your ability to see it or even perceive it, only on whether it is in that aforementioned darkness or shadow.
