I wanted to do a Demiplane shop too. I was going to have a simulacrum stand guard over stock while I wasn't around.
Bear in mind the simulacrum you make from simulacrum has the same need to eat, drink, breathe, and sleep that you do, so unless you don't need those things (e.g. if you're a warforged or dhampir), you'll need to keep it supplied with the necessaries.
Apropos the topic of this thread, I've found that, despite it not being codified in any rule in 5E, pocket dimensions appear to consistently follow the rule that the following criteria apply unless stated otherwise, in terms of life support they contain:
Standard gravity and a flat floor.
There's no way in general to puncture the outer barriers of a pocket dimension, including the floor, so your simulacrum will need a way to dispose of waste.
Infinite "air" (a creature inside can breathe indefinitely unless stated otherwise, and the atmosphere is transparent by default, not opaque).
The opposite is true for water and food: both are absent by default. Your simulacrum will need a source of both.
A temperature that does not trigger any of the mechanics for dealing with cold or heat.
I think they're intended to contain bright light by default. This is the weirdest unstated assumption about them, because you would think they'd work like caves and be devoid of light by default, but I've never heard of any DM, including WOTC ones, insisting that Rope Trick needs a light source to see inside. Plus, if we look at a Genielock's Bottled Respite, light isn't specified as being available, but it beggars belief the genie would provide seat cushions but not light.
If your Demiplane is brightly lit, your simulacrum will need a tent or something to sleep in the dark. If it's dark, you'll need light sources.
As a final note: the rules don't really cover handling this, but I would expect any DM to implement a mechanic for your simulacrum going more and more insane over time if you leave them alone with nothing to do. Solitary confinement is a challenge for any sophont.
I'd personally be OK for the creator of the demiplane casting the spell again to re-open the door back to the specific point where they entered it, if they have not yet left it. ...

And to be clear, this is the exact interpretation that was suggested in the Sage Advice link provided at the start of the thread before it wandered off into the plane-hopping teleportation tangent - the intention according to JC is that a second casting of the spell can "re-open" the previous door allowing you to exit.
This came up in one of my games, we gated into a dimension created by demiplane then cast demiplane to open the door and we ended up ruling that the door opened up in the last spot the door was opened. Easy and it makes sense.
I've been looking into how to make an inn within the demiplane.
I would have the wizard be a small race, probably gnome or halfling, then construct a structure within the 30 foot cube with features that include: a 10x10 area with a permanent teleportation circle. An area for medium sized creatures to eat and a bunk area, ceilings on the first floor about 8 feet high, ceilings on the second floor would only be 6 feet high, assuming floor thickness of about 6 inches, that would allow for third and fourth floors with 6 foot ceilings and a couple of feet left over for attic storage (or maybe a subfloor/cellar).
You can get creative with the floor plans and have gnomish workshops, alchemical laboratories, libraries, etc... Keep a supply of healing potions and greater restoration scrolls, etc...And whenever a party with a caster high enough level to cast plane shift really needed a respite they could hop over to the Inn at the End of the Universe, get patched up, fed, rested, etc...
The wizard/inn keeper can always have another demiplane he uses for his personal storage so the risk of a patron invasion would be low. If there were a large number of guests he could always move some into a Magnificent Mansion with an opening in the demiplane. Just to prevent awkward appearances I would probably establish a permanent Private Sanctum excluding the entry point/ foyer so everyone came and went the same way.
I am also considering a stable area where large sized mounts could be lowered into portable holes held in wooden frames that can then be slid into shelves 6 inches apart (so air can get in), but generally the mount is in its stall and you could have 10 horses in a 10 foot cube.
Cooking would be done via heat metal infused range tops to prevent smoke build up. A house rule would be no fires allowed for same reason, lots of continual light/flame spells for illumination. Could use a system of Leomund's Tiny Chests for frequent patrons to keep their own back up supplies or secure storage. Privies would each contain a bag of holding which would periodically need to be dumped out and sanitized. Would need an ever flowing bottle to create a plumbing supply system and would require periodic discharge (likely into another demiplane [theres no limit on how many a wizard can create right, there could theoretically be hundreds of them just full of waste/trash].
I believe RAW this can be achieved by a 15th level caster without much DM fiat at all. Obviously it would take a long time to establish and a lot of magic items and spells used over a long time (particularly for the permanent effects), but eventually you could have your own interdimensional Casablanca. It could be a great story hook to adventure in the first place as you gather the wealth, magic items, and experience necessary to pull this off, or later as an amazing place to pick up interplanar information/ plot hooks.
