I don't known if anyone has found/ made this character combo yet, but I think I discovered a great general defensive build. First you take Yuan-ti as your race, not only for immunity to poison, but also for advantage on magic saves. Then you take paladin as your class. Not only does that give you a good hit die and proficiency in heavy armor and shields, but at later levels you get supporting auras. Now at 3rd level chose oath of the ancients. This isn't important now but eill be in a few levels. At level 4, take the Heavy Armor master feat, so that when you are hit by a nonmagical slashing, piercing, or bludgeoning attack, you reduce it by 3. The build is complete when you hit 7th level, since you get an oath spefic aura, which reduces magical damage by half for evey ally within the aura, including you. That means for spells that require a saving throw or take full damage, worst case scenario, you take half damage, and the best case is you take a quarter damage. Anyways you're welcome for the combats I definitely made more difficult for the DM.
This is really not that OP. You need to think about positioning. It is so incredibly unlikely that your whole party will be within 10ft of you, and even then, this is only for damage from spells. The rest of the time, this is just an issue for your casters. Because, once you enter combat, and your Paladin wants to go up front and melee stuff, the frail Wizard is going to have to come with you to benefit from this aura. This really isn't that OP.
Attack roll: Use reaction to shield (AC jumps to 25)
AoE attack that is not a spell: Use Reaction to use Absorb Elements (Resistant to damage)
Even if you have to roll a saving throw you are rolling the common used ones (DEX, WIS, CON) at +5, + 7, and +11 respectively.
You can even use sanctuary after you attack as a BA to force them to make a WIS to even target you...or use spells like Mirror Image, Blur, Blink, or a litany of other sorcerer spells.
Yuan Ti oath of ancients are very good against magic! To make it a little bit better against some spells, also add in Rogue 5, so that you can Uncanny Dodge to halve the spell damage you take from spell attacks, and Rogue 7 for Evasion

I like this build but I like the sorcerer aspect better because you can just...cancel the spell all together!
Counterspell would make it so not only you are saved from the effect but your whole party. You can even work with your caster friends to counter the coutnerspell!
Monster Slayer 7 is worth an honorable mention as well, as an alternative to Rogue that makes you a little better at all saves against your Slayer's Prey target, but at the expense of Evasion (which is probably better). Would make you a higher level multiclass spellcaster... but would be signifigantly more MAD.
The Arcana Cleric's Spellbreaker is interesting too, as is the Peace Cleric's Emboldening Bond, and Bless and Resistance.
And of course, let's not forget the Mage Slayer feat!
The Azorius Functionary background (Ravnica) can be used to add Counterspell to any class' spell list, including Ranger or Paladin. Also, Mark of Sentinel Human (Eberron) (though we want to be a Yuan-Ti).
I'd need to think a little bit to see where the best combo lies... but there's something here, some kinda terrifying mage hunter.

I like this build but I like the sorcerer aspect better because you can just...cancel the spell all together!

Silence ruins spellcaster's days as well... as does Blindness/Deafness, or anything that inflicts Blinded (including easy spells like Color Spray.)
