The "Silly" option is to play with all Artifact level magic items. In addition to their normal benefits, the major and minor beneficial properties can range from flat bonuses to AC or damage resistances, to continuous HP regeneration.
However, the absolute best "tank" is a 20th level Druid, whose "Archdruid" capstone allows them to use Wildshape an unlimited number of times, which means that they can refresh their form's HP pool as a bonus action every round. This is an absolutely broken ability, if the DM doesn't nerf it correctly.

That's a pool of 126 hit points at AC 16, I believe, maxing out both hp and ac. That's really good.

A Huge Giant Crab has 161 HP (AC 15), while a Sperm Whale has 189HP (AC 13). The whale is gargantuan, and their tail has a 15ft reach (6d6+16). Toss in a Fly spell, and you've got a monster on the field.

Neither Power Word Stun, nor Disintegrate are enough to kill them in a single hit, and by the next round, they've already refilled their tank.
A sorcerer with quickened spell could do it, though.

Quicken doesn't allow for multi-casting leveled spells, so they'd need to throw out something like an Eldritch Blast and hit for at least 39 points of damage, which is only technically possible.
It would be easier to fill the combat with minions or traps.
However, a Sorcerer with a dip in Fighter for Action Surge could certainly do it.
Then again, if the Druid can find a way to be immune to Stun, then it's moot.
Disintegrate and Power Word: Kill generally won't cut it, but Power Word: Stun will unless the Druid is a Hill Dwarf and/or has the Tough feat and a GM who has chosen to rule that either or both apply during Wild Shape (it's generally impossible to predict which feats and racials work post-Wild Shape - everything's a house rule). Mammoths have 126 hp base (and +5 to Con saves, fwiw). If the Druid took Resilient (Constitution) and that works in Wild Shape under their GM, that could interact with Power Word: Stun.

I've never played in a campaign with either of those splats, and I've never read them, either. I think introducing module-specific animals is a bit... risky, in terms of what you can reasonably assume a GM would allow. Mammoths are in the Monster Manual. Since your links don't work for me, am I correct in assuming the HGC and Sperm Whale are CR 6?

Good catch, they are both CR 8, so would be ineligible. I can agree that the "Huge Giant Crab" would be a risky choice, due to nicheness, but the Sperm Whale should otherwise be fine, since it's just a statblock for a creature that exists within the real world.
In lieu of those, 126hp does appear to be the cap, so the work around would probably be a casting of Aid at high level to reach up to 166hp (126+40). Though, that would probably require help from an ally.
Either way, if a DM wanted to K.O. a 20th level Druid, it is certainly doable with a combination of various effects. The issue is that the DM realistically has to build the encounter to kill the Druid, otherwise it'll just sit there taking hits all day long.
The thing about Maple is that she doesn't actually have a high AC by D&D standards, she's just got a massive HP pool and takes tiny amounts of damage per attack if she's not outright immune to the damage type.
Nah, multiple times she runs across something that breaks through her defense and just spams healing potions after each hit until she becomes immune to the damage type. Her vitality is boosted only through status effects. She gets basically one-shot at a point with piercing damage
I enjoy that this turned into a discussion on how to kill a high level druid.
My Maple character will definitely need to learn polymorph at soonest opportunity. If we want to take her all the way to 20, I'd probably be tempted to figure out how to pick up true polymorph to shift into ridiculous things like the T-Rex.

I guess that is a little closer to an ancient brass dragon than a t-rex. Anything in the game have 4 arms, stand 30 ft tall, and do like 10d6 bite damage?

Yeah, by an attack that ignored her damage resistance.

It's pretty confusing, the stat is named VIT in the anime and manga, but it control defense. HP is a separate stat. Her Loving Embrace set (the white armor) is apparently all +HP since it costs HP to access skills in that state.

it's only weakness is power word kill.

Both the Huge Giant Crab and Sperm Whale are CR 8 critters, which means that not even a level 20 Moon Druid can wildshape into them.

Pretty much, but level 20 characters can do stuff like that.

Forget a T-Rex- true polymorph lets you turn into an ancient brass dragon.

A pit fiend could work, otherwise a ancient brass dragon or ancient white dragon fits best, IMO.
