I have a Grung Rune Knight. I saw this in another Rune Knight build and wanted to know how it "should" work.
As a Rune Knight, I become LARGE. As a Grung, I have a standing jump of 15 feet. So...I grapple an enemy and lift him up. I am already 15 feet tall. I jump up 15 feet and drop him. Does he take 1d6 or 3d6 fall damage?

Up to your DM - but keep in mind, grappling is like wrapping your arms around them.
I'd say to lift them above you, you'd need to make a strength check (DC would be depending on whatever the size and armor the enemy is wearing).
I'd also probably rule that your standing jump would also be impacted since you're potentially carrying something/someone heavy.
When you move while grappling a creature your speed if halved. I would also apply that to the height of your jump. You are certainly limited to a jump of 12.5 feet as that is all your movement.
Do you grab an opponent, jump, flip him, and do a Pile Driver? Because, irrespective of damage, that is what you must do!

Blanket disclaimer: I only ever state opinion. But I can sound terribly dogmatic - so if you feel I'm trying to tell you what to think, I'm really not, I swear. I'm telling you what I think, that's all.
Well - who in their right minds isn't. But really, this springs more from the fact that I watched pro wrestling when I was young.

I hadn't considered the pile driver because the RAW doesn't consider it. The damage would be higher so I'd have to work with the DM on that. Hell, for that matter as a huge creature I should be able to pick up medium creatures and just power slam them. I'd have loved if they incorporated some wrestling/mma maneuvers for Monks. Would make them a lot more popular.

To my way of thinking, any build or idea should be allowed to either do as much damage as a regular weapon attack, or expend some ressource - like Ki - to do more, occasionally. If your guy wants to jump around on enemies every fight, I'd allow it, with damage equal to normal weapon attacks. On the other hand, if this was a trick used occasionally in some clever way, I'd allow an additional advantage, like knocking the enemy prone as well.
But that's just me.

Up to your dm,
If you lift it high up above your head and drop him, I would rule 3d6, but that’s just me.
