I have a question about protecting my coins from a team mate. They're a Drow Rogue and they've been caught stealing from us before. I retaliated and stole almost half of her gold as payback, but I'm concerned about her wanting her stuff back.
Is there any known system for booby trapping or protecting my own gold pouch and back pack?
Maybe a mousetrap or something that explodes with blue ink?
Well, I had something similar to that happen, and I mostly solved it by stealing a bag of trained poison snakes from an assassin, and after a few lucky animal handling rolls I was able to tame them... at that point I just started keeping my coin purse in the snake bag and haven't had any trouble with pickpockets since.
Thieves tools can be used to set traps, per Xanathar's guide. Get creative, use contact poison. Alternatively, if you have access to magic or magic items, there are spells that can be used to ward the bag. Specifically, you could cast Alarm around your stuff every night.

Kill them in their sleep. Stop traveling with them. Have them arrested. Plenty of solutions. But most people wouldn’t trust their lives to someone whom you don’t even trust your money with.
I don't know to me even if the DM gets them to stop I wouldn't wanna game with someone like that. People that act like this really bring nothing to the game but problems. Unless the DM kicks them I would start looking for another group.
This is one of the quickest ways to kill a player group. Nobody likes their things being taken, and "oh, but it's what my character would do!" is not a magical response that absolves the player from having done something they know is wrong.

As a player - simply say to the other player, "Your character stealing from party members is not cool, please stop."
PVP is a player issue, not a character issue, and therefore easier to resolve out-of-game.

I've sent a few ideas to my DM and they're cracking up and seriously considering them.
We will also let the player know it's likely to lead to their death if they keep it up.*

Put a vial of poison in your coin pouch with a label on it that says "Potion of Healing." It's not your fault if the rogue poisons himself, is it?
Then offer to sell him a vial of anti-toxin, and charge him 50gp (which he just stole from you) for another mis-labeled vial of poison.
If he's still alive, he'll steal from someone else in the future.

My gnome is an illiterate fool, it's entirely plausible that he "accidentally" mislabeled a healing potion.
Seriously, talk to the other player and speak to cooperative play.
If you are a PVP group, and that is fun for you, get access to animal friendship, charm a rot grub with it and keep it in your money pouch...
