I would like them to bring back the Sword-sage class and maybe the Warblade. Battle Master and two weapon fighting just don't cut it but revampiling the popular Sword-sage class for a two weapon fighting sentry theme would be nice and the 307 maneuvers could really help spice up the martial classes.
Selfishly I want more Ranger options because Ranger is my favorite Class. I want at least one elemental Ranger (like a Ranger version of The Fathomless or Wildfire Druid) and at least one more Planar Ranger (Astral Wanderer? Demon Hunter?) as well as an actual fix to Favored Foe that doesn't suck and Class Feature Variants for the higher-tier Ranger features. Is any of this likely to happen? Nope. But it's my wishlist.
I also want a Circle of the Seas Druid, a revisit to the Modern Magic UA, a Swordmage playtest class, a feat that helps fix Two Weapon Fighting, and more magic items. The Scout Rogue doesn't really do it for me either. Not a bad subclass at all, but not what I'm looking for when it comes to a Spell-less Ranger.
Regarding the Ranger's spellcasting, I'd love to see two Class Feature Variants playtested:
1. A CFV that makes them a prepared caster instead of a known caster (I posit this is the only change in spellcasting the Ranger really needs to succeed)
2. Perhaps an alternative to their spellcasting that provides them with a 'maneuvers' sort of mechanic, except it's all about trick arrows, setting traps, and coating their weapons with agents that offer a variety of effects.

This might be an odd one, but I would like to see more unique takes on the "Extra Attack" feature for subclasses. I wouldn't want a ton of new options, since after a while it would probably get confusing.
I think its really cool how alot of classes/subclasses get Extra Attack and its the same for almost everyone, but then you get the Fighter (who is the go-to martial class) whose specialization in weapon-based combat is marked by being able to make up to three or four attacks with their version of the feature. Then you have the Bladesinger wizards, who are spellcasters specialized in weapon combat who get to replace one attack with a cantrip in their version of the feature.
Idk, I feel like we haven't tapped the full potential of the ways the feature could be varied to play off of other prominent class features for subclasses specialized in weapon-based combat.
Just spittballing ideas, but maybe there could be a Cleric or Paladin subclass that comes with a fairly weak channel divinity option(s), but you can use Extra Attack and replace one attack with a use of your channel divinity.

I'm going to sort of agree with the post above me and hope for more backgrounds, particularly backgrounds suitable for an extraplanar character. I have my groups first UA fairy, and I think the Haunted One from Strahd as well as Far Traveler and Maybe Outlander might work, though some of the latter's gear is a bit off. Anyway I wouldn't mind seeing some play tested features for characters from the Feywild, etc. I'm figuring with Feywild ancestries being tested for a potential new product, I hope there's fuller support for things like Fey backgrounds, maybe even more Fey feats, though there are enough of those already.
There are some good homebrew I'm probably going to see how the more popular ones play out.

A few more weapons. Like the number of third party homebrews with extra weapons and rules are a dime a dozen, but we really haven't gotten a 5e-official expansion.
I wouldn't want a TON of new weapons, but something like a reprint of weapons that appear in specific settings and campaigns (boomerang, double-bladed scimitar) as well as a handful of new weapons with interesting Special properties to add other unique options. Maybe a rework of the blowgun and a few other weapons while we are at it.
Toss in some new magic item weapon options and you could probably fill out 2 or 3 UAs and make up a chapter of a new book with it.
