Super solid trio here. I think the Drunken Master scratches that itch that scratch that I've seen a lot of players on other boards worry to bit. Oath of Redemption is full of wonderful flavor and really goes have a number of really fun abilities that make you want to follow the fluff. I love the Monster Slayer more than I enjoyed have the UA I've seen, haha. I was a big fan of the Monster Hunter fighter archetype when I first saw it because my first 5e homebrew was an attempt at making a Witcher styled monster hunter out of the ranger chassis (before the ranger got it's much needed tune up). Very solid.
I really liked the Monster Slayer subclass for the ranger. It makes me feel a little like a witcher. Addl Some levels of the alchemist class from UA and the result might be worth a try :D
Also, Drunken Master seems really fun! And the paladin seems like a great Path for a true defender and protetor of others, especialy with a group of friends. Michel RP potential!
Myself and a group of my friends were discussing playing the game as pacifists. The new paladin along with the previous pacifist monk are amazing for this... I can't wait to run that game.
All three subclasses would make a pretty interesting party. Like almost something out of an anime or a webcomic. Though it's missing something. Maybe a mad genius (Artificier).
Feeling like Drunken Sway is too crucial of a move to be a one use only. Maybe make it Ki based to bring it more forward as one of the main aspects of the subclass (since it is for sure the most "Drunken Master" type of ability in the whole moveset). The synergy between Drunken Technique and Intoxicated Fury is pretty hilarious though: Stumble into crowd, pummel said crowd with an insane amount of attacks, stumble back out with a free disengage.
Monster Hunter and the Pali Oath look fairly powerful but balanced (well... that Unarmored Defense for the Pali may be a bit much...)

The Drunken Master is the one of the three subclasses that I thought could be beefed up a little, and I think this suggestion would help. I was very pleasantly surprised to see the Drunken Master brought back to the table, and I hope to see it made official.
Honestly, all three of these new subclasses could be used to make some great characters. I like the flavor on all of 'em!

So much RP potential for the new Oath! It also has a really good crunch to it's mechanics. I could see a character playing a Pacifist that grapples to subdue. Maybe multiclass with a Bard for expertise in athletics? Solid AC and only a 14ish STR could make for a really good spell caster that can buff and subdue enemies without necessarily dealing raw damage.
You're right, One use per short rest isn't bad, but something needs to be buffed about the Drunken Master for it to be on the same playing field as the other ones given. Maybe give extra uses as you level? Or even extra options on its "Drunken Technique" like The Open Palm has.
Being able to choose from its free disengage OR maybe imposing Disadvantage on those he hits with Flury or give Dodge as a free/bonus action?
Or maybe just give Drunken Masters the ability to get up from being Prone without costing as much movement speed?

Edit: Looking back at it, Paladin of Redemption is pretty sick too- very flavorful and looks like fun for roleplaying purposes.
