I believe none. They may or may not at some point be published in a future book. Also remember that everything in AU is concept play testing. The actual balancing is going to happen internally within WotC (they just wanted to get paid to play d&d and call it play testing.)
So I believe nothing has made it to book form yet.
Sotrm Sorc and Swashbuckler both were UA that ended up getting published, but beyond those I can't recall any others. But, unless you're playing Adventurer League, its not a problem. There's some speculation that there will be a big published book of previous UA material, but you don't need something to be "official" to use it (again, unless you're playing AL).

First, thank you to everyone that replied. I haven't read the SCAG, yet. But, at least, when I read about the Storm Sorcerer and Swashbuckler in the UA I'll know they're 'official' (with some tweaks, of course).

Its not the best presentation, but its there. Any of the other comprehensive lists I knew of have been hit by takedown notices, but that's just the legal world we live in when it comes to protecting your IP.
There was a slick PDF that a redditor had compiled and kept updated, but it was recently pulled due to a DMCA request from WOTC. I'm not sure if it took Wizards a couple months to notice the PDF or if the DMCA request might be related to the rumored new rules expansion product.
The Goliath is a sub-race that appeared in UA and it's available on this site, so I assume it's been made cannon. Im really looking forward to a canonized Mystic class!
I just download them all from the WoTC site and keep them in a folder on my Google Drive for easy access. Granted they are all separate PDFs but you can use various programs to merge them into one if you like.

I did something similar. I have them all in a folder on my laptop and I renamed them to put them in chronological order (and to 'fix' their naming scheme).
Yeah that naming scheme is terrible. Makes it very difficult when trying to sort out which is which. I have created a race guide that incorporates all of the class options including UA using http://homebrewery.naturalcrit.com/ that's a pretty cool site. Also about halfway done with a class guide that compiles all of the options as well.

As someone relatively new to UA, and reading the back-dated articles, it struck me that I have no idea which articles became 'official', if any.
I think I'm specifically talking about the UA articles published in 2015 and 2016.
