Don't forget that there are other ways to handle levelling. There is the "milestone" method that I see far more often these days - players complete a series of campaigns and level up regardless of what XP they might have or haven't gained.

I like milestone leveling (essentially, you don't give xp per encounter which adds up until they have enough to reach the next level, but rather you decide when the players have earned it - typically after a major story beat, more or less after a chapter in the campaign, the so-called 'milestone' - and simply tell them they can level up) though XP has some advantages too, mainly showing the players their progress. Milestone leveling is a lot less work, it prevents issues with players missing sessions, and it's more convenient for planning ahead.

If a group of players defeats a creature do they each gain the experience given from that creature or do they split it up?

The old system of tracking experience points and dividing them up has been around since the olden days.
I much prefer to use the milestone system. It lends itself better to games that are more story-driven.
It also makes a lot more sense in a level-based system.
