How have you used or how do you want to use the Wish in your campaigns? In one of my campaigns, my Wild Magic Sorcerer would use heightened spell and bend luck with a Planar Binding. It's a single save, and if they fail, I have a slave for half a year. Used it on a solar and the DM ripped up his notes. Ah, memories!

The wish spell can't upcast a spell by RAW, but that is still fantastic usage of the spell.
Concerning wishes and upcasting... Wish says: "The basic use of this spell is to duplicate any other spell of 8th level or lower. You don't need to meet any requirements in that spell, including costly components. The spell simply takes effect."
Upcasting (In this case Planar Binding) Says: "When you cast this spell using a spell slot of a higher level, the duration increases to 10 days with a 6th-level slot, to 30 days with a 7th- level slot, to 180 days with an 8th-level slot, and to a year and a day with a 9th-level spell slot."
You are using a 9th level Spell Slot to cast a spell (Wish) which Duplicates a Spell, including its upcasting rules. Therefore you are casting it AS a 9th level spell since that is the spell slot consumed.
I am aware that Jeremy Crawford has said it can be cast as if with a spellslot up to 8th level here, but RAW this is entirely incorrect and I will not be entertaining that ruling unless there is an errata.
Anyway, my Favorite use is Clone and Simulacrum without the costly components.

The flavor text for the solar states plainly that all known solars are stewards of specific deities. This means a mortal being bound the servant of a specific deity to its service, which seems like a springboard an enterprising DM could use to make things very interesting (if we're being charitable) for said mortal instead of just ripping up his notes.
But, regarding the point of this thread, using wish to get around long casting times is always a good way to use it. You can instantly pop a forbiddance spell down in the middle of a fight against any of the creatures types it damages. If they're not able to dispel it or escape, they're in trouble.

Symbol. Symbol. Symbol. After a week, no upstart rogue is going to paw through and pilfer your stuff at your house. Maybe they will burn it down, but the Symbol of Stunning with a Symbol of Death triggered by the first is going to leave a small pile of dust, leather armor, and some thieves' tools you can hock. I'm not seeing anything RAW that says you can't put as many symbols in an area other than space limitations - only so much wall, ceiling, and floor space. You are going to force that high-level rogue who foolishly didn't get Expertise in Investigation to roll a lot, and one roll he will fail. Hell, you can probably use a trigger like "if anyone or anything other than me looks at you" on your symbols so even the process of detecting the Symbol triggers it. If the Order of the Scribes Wizard is using his book-drone to scout out he better make sure he is more than 60' away from the symbol(s) he just triggered. Only a dwarf in full adamantine plate with an amulet of Constant Anti-Magic Sphere is going to be able to walk through your symbol riddled wallpaper. And if a dwarf in full adamantine plate with an amulet of Constant Anti-Magic Sphere is trying to get you, then just run away and collapse the house around him.
2nd Favorite: Imprisonment. On random people who displease my cranky Archmage. Like slow waitstaff. Or that smelly urchin boy who didn't get out of my way. Or the laundress who couldn't get the ichor stains out of my robe - that one robe I got at character creation I mean from my apprenticeship. Turn their Hit Dice into money as the Wish will generate an indestructible 500 GP per HD gemstone - a wonderous jewel with the slight flaw of having a one inch image of that waitress who mistook your Hefeweizen for some common tavern Ale. Luckily you can't smell the urchin as he sobs into his soiled knickers since he didn't have a shirt, much less a shirt sleeve, to wipe his snotty nose and grimy face on. Make the constraining gem an Amethyst so it's huge for the GP but still qualifiers as a transparent gem.
