I want to add Natural armor to a subclass and have it scale to level. i.e. 13 + Dex at Lvl 1, 14 + Dex at Lvl 7 and 15 + Dex at Lvl 14.
How would I go about doing this?
You can't with the tools D&D Beyond provides. The homebrew creator only mimics what official content does, and there is no natural instance of this happening that I can think of.
I think this should be possible if you Homebrew it.
You can edit the base AC to 13+DEX using Set - Unarmored Armor Class with a fixed value of 3. As for scaling, I don't know if you can make that work in the one feature, or whether you need to make a separate class feature for each level. You will have to experiment with that, or maybe someone more experienced knows.
One of the best ways to find out is to copy an existing item/subclass/feat and see how they work... then copy and adapt that for what you want.
Also, there is a separate forum for Homebrew & House Rules with lots of information. You might get more answers there.
I scaled some homebrew weapons for my party by making 3 copies of each weapon, each with an increasing set of stats/specs. I swap them out for them when they get to the right levels.

You might be able to do it by using snippet codes:
