I'm trying to have a weapon that will roll a d10, a d8, and a d6. The D8 may scale depending on how many ki I want to use. I'm doing this for a monk skill I'm using that adds D8s depending on what I'm doing at the time. Having to keep clicking the dice on the bottom gets confusing, so I'd rather make weapons for each skill i use to track faster.
Don’t try to build a custom weapon, no item will give you what you want.
Instead, make something in the sheet itself—a custom action structured like Sneak Attack. You can make one for each variable and label it appropriately. It’s basically an ability macro on the sheet itself.
If there’s no set action for this, I’d recommend putting it under the Other tab in your Actions section, like where you’d find Sneak Attack or Precise Strike.

There is no way to do this with a 1 click button using nothing but dndbeyond, whether its a homebrew thing or a custom action. It will always been at least 3 buttons, one for each of the damage dice. Scaling the number of d8s isn't a thing that can be done outside of a pseudo-spell that can be "upcast" at higher "levels", similar to how a real spell works.
It may be possible to do something with the different damage dice using a homebrew weapon only IF you are going to use the Beyond20 extension. I've not looked to far into that because having a feature only work when using an unsupported browser extension is not the best way to make homebrew. Even with this method, I don't believe you can scale that d8 with ki points anyways.
