The sidekicks in the “Extras” section are specifically those found in the Dragon for IceSpire Peak and the follow up adventures. If you haven’t purchased those adventures, you won’t see anything under sidekicks on your character sheet unless the specific character is in a campaign with content sharing turned on AND someone in the campaign has purchased one or more of those adventures.
DDB has not yet been able to build a system to create sidekicks per the rules in Tashas. When that is developed, it is unlikely that they will be accessed via the Extras menu.
In the meantime, it is possible to create sidekicks as homebrew monsters. This is what I’ve done in my game where one of the players has a sidekick.

Can you expand/share what you have done using homebrew?
Certainly. One of my players has a wolf sidekick. So I created a homebrew "monster" using the wolf as the template. Of the three types of sidekicks, wolves can only be Warriors. I adjusted HP, HD, actions, etc. to reflect the rules and action options for sidekick warriors, and saved the "monster." My player then added it to her character sheet through extras (I think as "miscellaneous"). I do have to level it up everytime the party levels up, but that has not proven to be a big deal
For a spellcaster sidekick that is humanoid, I would start either with an NPC "monster" statblock that comes close, or the "Caster-Healer" or "Caster-Mage" level 1 sidekick statblocks if you have Dragon of Icespire Peak. (There is no Caster-Prodigy option in Icespire Peak). Note, however, that the DOIP sidekicks are not the same as those in Tasha's and you will still have to make changes. Once I had my template, I would add any racial characteristics I thought should apply, and then edit to reflect the sidekick rules.
Same thing with Expert.

I wasn't really thrilled with all of the options online that I found for creating Sidekicks, so I created a template in Excel for generating them myself. This uses an NPC character sheet template I downloaded from (NPC sheet by MariekeSmit on DeviantArt).
You'll need to download the workbook and use the Desktop version of Excel - there are Toggle Buttons in the sheet that don't play well with Google Docs or with Excel Online.

Looking at the Monster list, it seems the sidekicks are only level 1. But using the Encounter Builder, all levels of sidekicks are available. This assumes the content has been unlocked via the Dragon of Icespire Peak adventure.
The problem with adding these as extras is that while you can track HP, the stat blocks don't support dice rolling. Not a huge deal, but if you really need dice rolling, then a Home Brew monster would be the way to go.
Don't expect the Tasha's sidekicks to be supported anytime soon. All of the DnDBeyond staff seem to be working on Maps and the VTT.

The party I'm DMing for will have a sidekick. Wondering if using a regular character sheet would work or if not how best to track them?
I just use a Google Doc.
look up 'sidekick character sheet' on dmsguild, its pay-what-you-want and doesn't have all the bloat of a regular character sheet

There are Sidekicks available in the Extras section of your DDB character sheet. They're not fully customizable as I can tell, but it's there.

I also would really want a sidekick character sheet. Or make the Sidekick classes a thing. I would prefer the UA sidekick classes.
