Could somebody explain why you would choose to have it be a single die roll rather than roll for each missile?
Because magic missile is an AoE spell. It's just a strange one, in that you pick the targets and you can pick targets twice or more.
When you catch multiple creatures in a fireball or lightning bolt, youi roll damage once, not once per target. So, some people do the same for magic missile.

The major difference is with Evocation wizards who would add their Int mod to a single damage roll via Empowered Evocation at 10. If you’re only rolling once then it’s a big jump in damage.
Otherwise there shouldn’t be much of a difference. Personally I prefer rolling multiple d4’s.

So, Fireball deals 8d6 damage. That's the damage roll. It deals that damage to each enemy targeted. The damage roll for Magic Missile is 1d4+1. It deals that damage to each enemy targeted, but you can target a single enemy repeatedly.
As mentioned its important for Evocation Wizards. Its also important for certain Tyromancer Hexblades.

I have been reading that some folks roll a single die for the damage of Magic Missile. I have always rolled damage separately.
