Im new to 5th edition, having just lost my first character to a diabolical crit at 3rd level, and I cant seem to find much about professions for another idea I have.
There seems to be tool kits for a few "occupations" and intelligence seems to be the attribute linked with them but there feels like a gap when Im looking for a dwarf miner whose into his geology and minerals and ore extraction.
As an adventurer your profession is Adventurer. However, there are Downtime rules in PHB, DMG and Xanathar's which can cover things like running a business.

I think you misinterpret what Im trying to ask for.
Im an adventurer but I love rocks and gems and know how to extract them from the earth. Its a knowledge that has nothing to do with my adventuring but could be useful in certain situations. Is there a way of representing that without running a business?
you could make "Miners supplies" a type of artisan tool and be proficient with those (proficiency granted by your background)
you could also make it a Background feature of a costum background
or you could talk to your DM and if the situation arises he will let you make a Intelligence check relating to something like that with proficiency (adding your proficiency bonus) because your character is trained in these kind of things.
Proficiency with these would represent that. Masonry is working with rocks and stone and Jeweller's Kit is working with gemstones (identifying quality, cutting, shaping, and making jewellery with them).
You can gain these using the Guild Artisan's background, or create a custom version.

I see that having the tools gets you the proficiency modifier that you can apply to a roll - Thats the bit I wasnt connecting!
