I have been contemplating buying another Feat and possibly dipping into Barbarian. Initially it was for the Rage's extra damage and BPS resistance. I didn't realize that they also got the Martial Weapons' Fighting Style Feats.
So as a 5th level Monk/1st level is this the correct reading of adding more attacks?
Base attacks are the Attack Action two normal attacks and a bonus unarmed attack: 3 Attacks
Utilizing the Light Weapon's Nick Property (Weapon Mastery): 4 attacks
taking Two Weapon fighting: 5 attacks
Taking Dual Wielder Feat: 6 attacks.
If all of that is true and I get 6 attacks does Two Weapon Fighting all me to use my modifiers for both the Nick property attack and the Dual Wielder Attack, or only on it's turn?
The Two Weapon Fighting feat does not add any new attacks. All it does is make an off-hand attack made with a Light weapon do more damage. However, neither Monks nor Barbarians have a Fighting Style feature that allows taking this feat, so this character wouldn't be able to take it anyway.
Dual Wielder does add another way of making an attack via a bonus action, but you only have one bonus action per turn, so you can't use that and your Martial Arts bonus action unarmed strike on the same turn.
So, in your example, you can make a total of four attacks — three as part of your Attack action (two from having Extra Attack, one from having Nick weapon mastery) and one as part of your bonus action, which can be either an unarmed strike (using Martial Arts) or a weapon attack (using Dual Wielder).
Taking a second level of Monk will allow using Flurry of Blows to make two attacks as a bonus action instead of just one (for a total of five attacks per turn) but this does have a resource cost (1 Focus Point).

Hmm without Two Hand Fighting, it's kind of unappealing without adding your ability modifiers. Especially since my unarmed strike would do more damage than the weapon attack from Dual Wielder. Oh well, I'll just stick to what I have. Maybe take Skulker or Savage Attacker.

Not saying it is optimal but if you purely want to maximise the number of attacks you could take 2 levels of fighter for action surge (another 2 attacks once per short rest).
It is a route to the duel wielder feat but by level 5 there is no reason not to use unarmed attacks with your bonus action, your best options is probably dueling (even though it doesn't work with unarmed strikes) or blind fighting if that is likely to come up a lot (eg someone casting darkness)

I am looking at a multiclass build with my ranger. Level 4 ranger two weapon fighting with short sword (vex) and scimitar or dagger (nick) that saves your bonus action. Then at level 5 monk you get a 2nd attack, so the sequence goes attack, twf attack with nick weapon, second attack, then bonus action flurry of blows. I'm not a rules lawyer but I think that's 5 attacks at level 9 and 6 when flurry of blows moves to 3 unarmed strikes.
Edit: The plan was also to grab gloom stalker in ranger and shadow monk for perma-darkeness to try to maintain advantage on as many attacks as possible, combined with hunters mark and the gloom stalker damage bonus.

From what the other poster said above, only Nick allows you to get the extra attack without using up your bonus action. You would still need use a bonus action with Dual Wielder either as with a weapon or unarmed strike/flurry of blows. That would be five attacks at level 5. Two from the attack action. One from Nick and 2 from Flurry of Blows. You don't get another Flurry of Blows until 10th level. Then you would make six attacks per round. The off hand wouldn't be able to use your + modifiers, unless you also got Two Weapon Fighting.
However, you can't cast Darkness and then Hunter's Mark because both are concentration spells.
Using Darkness or HM would be situational. It would be an either/or. I think I would use HM versus lower level "henchmen" and darkness/advantage against hard to hit BBEGs. I wasn't clear on that.
Talking about levels when you multi class is confusing because there's class level and total level. When I reference level 9 I meant total level, 4 ranger, 5 monk.; 6 attacks would happen at total level 14, 4 ranger, 10 monk. Again I wasn't perfectly clear.

It's a 5th level Monk, so that's moot.

If you really want the highest number of attacks, then you should go for the hunter ranger subclass and the horde breaker feature.
