What the title says. I found Nimble Escapes effect on a monsters CR, but I don't think Cunning Action has a way to calculate for it since it's not used in The Monster Manual. Any help would be much appreciated:)

I would just go with Nimble Escape for determining your monster's effective AC and Attack Bonus. The only thing Cunning Action lets the monster do that Nimble Escape doesn't is Dash as a bonus action.
I looked through the other traits listed in the Monster Features table and Teleport is listed as having no impact, even though it lets the example Balor move a total of 200ft in a turn.

I agree that movement speed doesn't strongly affect CR. The overwhelming majority of battles don't get larger than 50x50 feet at most, and in practice many also occur in closed spaces (like dungeon rooms) that don't allow much movement. Beyond 30ft or so, movement speed doesn't have much effect in combat.

Nimble Escape is a fine approximation. Cunning Action is effectively Aggressive + Nimble Escape, but they can't be used simultaneously, so you'd just take the more powerful option.
