So, from what I can gather, a non-monk character without any unarmed fighting proficiency can make only a single unarmed strike (because it is neither a weapon, nor does it have the *light* property) using an attack action. But then we get to monks. To bypass the normal ruling, the monk is specifically granted an ability that allows them to make an extra unarmed attack as a bonus action. The default damage for unarmed attacks is 1+Strength modifier however Unarmed Fighting Style also exists for Fighters, Paladins and Rangers. The unarmed fighting style makes unarmed attacks do 1d6+Strength, or 1d8+Strength if unarmed and not carrying a shield. Also if you grapple a creature, it automatically takes a 1d4 Bludgeoning damage from you at the start of your turn (one creature only).
Tavern Brawler also gives a 1d4+Strength option too, and it gives a once per turn 5 foot push when hitting with an unarmed attack, lastly the ability to reroll a 1 on a damage roll for an unarmed attack.

I'm a curseborn monk and my subclass is the warrior of the pestilent haze I have unarmed strike and flurry of blows. My character also has claws of pestilence and claws of pestilence: flurry of blows. Why does my claws of pestilence hit chance lower than my unarmed strike?

When attacking with a weapon, you add your ability modifier—the same modifier used for the attack roll—to the damage roll. A spell tells you which dice to roll for damage and whether to add any modifiers. Unless a rule says otherwise, you don’t add your ability modifier to a fixed damage amount that doesn’t use a roll, such as the damage of a Blowgun. See chapter 6 for weapons’ damage dice and chapter 7 for spells’ damage dice.
For Unarmed Strikes:
Damage. You make an attack roll against the target. Your bonus to the roll equals your Strength modifier plus your Proficiency Bonus. On a hit, the target takes Bludgeoning damage equal to 1 plus your Strength modifier.
Also, just to add, other classic examples where you don't apply your ability modifier include Cleave and the Dual Wielder feat.

Either D&D Beyond is acting up or you should re-read the subclass. Maybe the attacks use a different ability, like Wisdom?
