Tulok just came out with a new video and in it he stated that you could rage near the end of a long rest and create beast barbarian claws then turn those into hex weapons with your Hexblade feature. The claws disappear after a minute but if you resummon them would they stay as hex weapons or would you have to redo the process. And if they stay as hex weapons is it just until your next long rest or till you make new hex weapons, as you have two claws? Idle thought of how those mechanics would interact if I ever tried to use it.
While you could make a natural weapon a hex weapon, it wouldn't work in this particular case.
In order to rest, you need to be doing no more than light activity, which raging is not, so you could never be raging as a rest ends to have those claws to make hex weapons.

The Claws of a barbarian has the words "Each of your hands transforms into a claw", and this happens each time you enter a rage. So I would say that they are new claws each time - since they don't exist when you aren't raging. (And the specific word says each hand transforms into A claw - so no wolverine claws, just one claw for that hand!)
The Hex Warrior feature requires you to touch the weapon at the end of a long rest. So it could be argued that doing something strenuous, like Raging, would not disrupt the long rest since it is already complete. However unless you had Persistent Rage your claws would disappear after 6 seconds, not one minute. In either case it isn't a lot of time to use the weapon before it goes away.
As for whether the claws keep the Hex Warrior effect on subsequent Rages later in the day the answer is likely no. When the Rage ends the weapon disappears and Hex Warrior is specific to the weapon you touched. But assuming the DM allowed this the effect still ends when you finish your next long rest. This is explicitly stated in the Hex Warrior class feature and is true for all weapons. As a result there is no way to effect more than one weapon at a time with the Hex Warrior feature.
In all honesty even if allowed I don't see any benefit to the combo. All the Hex Warrior feature does is let you use Charisma for your attack and damage rolls with that weapon. To get the extra damage from Rage you need to make a Strength based attack. If it is for the additional attack granted by the claws then you should go Path of the Zealot for Divine Fury instead. Though in general Barbarian is a poor class to mix with a caster since Rage prevents you from casting or concentrating on spells.

The key word is "interrupted". As in the strenuous activity is not part of the rest, but you can continue to rest after. Otherwise, you can rest for 7 hours, then travel for an hour before getting the benefit of completing the rest mid travel.
