You can use a bonus action to toss this magic sword into the air and speak the command word. When you do so, the sword begins to hover, flies up to 30 feet, and attacks one creature of your choice within 5 feet of it. The sword uses your attack roll and ability score modifier to damage rolls.

Is it possible for an enemy to sunder a dancing sword?
If you toss the sword in the air then for 3 rounds can you : fight while using a two handed weapon (melee or ranged)? Or use a shield?
Can a dancing finesse weapon use sneak attack benefits?

I'd say no on sundering, it's not being held, so it can't be dropped, and it's not anything that requires concentration from you, so it couldn't be dropped in that way either.
For hand usage: Given that the multi weapon fighting feat talks about "drawing 2 weapons when you can normally only draw 1," I tend to rule that drawing 1 weapon as part of an action, such as an attack, is fine (this is also mentioned in the rules), but drawing more than 1 weapon on your turn then takes your action. So, if the dancing sword is already in your hand at the start of your turn, you could totally toss it up with your bonus action, then draw into, say, a greataxe attack with your action, fight that way for 3 rounds, then when the dancing sword returns to you, either let it fall to the ground as described here, or have a hand free to catch it.
Lastly I don't see why it wouldn't get your sneak attack, it swings with your strength/dexterity even though you aren't holding it, so if it has advantage I don't see why it wouldn't be able to use your ability to sneak attack as well.
I'm using one to effectively give my battle wizard the 'extra attack' feature. Either make my attack, toss it to bonus attack and immediately grab it again (imagine like slashing, then following through into a spinning slash, only the blade actually slips from my hand and slashes in from the opposite direction as I catch it, super cool), or slash with it, toss it up, and let it attack on its own the next few turns while I'm casting spells.
I had my party fight a flying sword and at the end if they used mending to repair it they got this amazing weapon!
The sword is what makes the attack, so it can't benefit from sneak attack or any other class feature while it's flying.

How does the Versatile and two handed properties work with the Dancing sword. As it is fighting and out of physical range, does that not negate "handed"?
Versatile. This weapon can be used with one or two hands. A damage value in parentheses appears with the property--the damage when the weapon is used with two hands to make a melee attack.
If it's not being used with 2 hands to make a melee attack, it uses the D8.
You haven't truly experienced D&D until you've played with one of these babies. Such a useful weapon but people hardly ever remember it exists.
At what level would a dancing greatsword be appropriate? I've got a character approaching 11th level, and it would really be appropriate (EK/War Mage multiclass).

So is it a one and done deal? Like you use it, it does it's 4 attacks and returns to you. Can you throw it back out and have it do the 4 attacks again?
Interesting how it doesn’t seem to have any “reset” requirement...
For example: these sort of items usually have a “cannot use until the next dawn” or “has 1d4 charges for this feature” or “you cannot do this until you finish a long rest”...
The Dancing Sword will attack up to four times, then fly back into your hand if it can...and it seems like you can immediately use it in this way again, with impunity.
That’s...pretty sweet.
And useful for melee character against those pesky flying characters.
dose the sword have any senses because i was hopping for my character to laydown smoke and escape whilst this fights for him
Unfortunately since the description makes no mention of any senses or degrees of sentience, RAW it doesn't. This is also backed up by the fact that it only attacks and moves when you specifically command it, so I don't think it has any further awareness than a normal sword does. RAW, you also can't make attacks of opportunity from the space of the sword as a creature leaving it's range wouldn't count as the creature leaving your reach, however I think it'd be a decent house ruling that you can use your reaction to make attacks of opportunity with the sword as long as you can see the target.
Interestingly, you don't need to see a space or creature for the dancing sword to affect it, so long as it moves within 30 feet of you. So you could command the sword from out of sight, though since the sword makes the attack, you wouldn't gain the benefit of being an unseen attacker. At least for me, this makes it essentially a spiritual weapon spell with 30 feet movement as a magic item. In that regard, I'm not sure how deserving it is of a very rare rarity, but spiritual weapon is a great 2nd level spell and I am a fan of this magic item!
On another note, as if Mordenkainen's sword wasn't bad enough, I just noticed it does require you to be able to see the space you want to move it to, for some inexplicable reason.
the base attack for the sword is 1d8 when in (command use) but in melee use it can be used one handed for 1d8 or two handed for 1d10. hope this helps. its a great weapon to have i use it for my eldritch knight and can get a spell and attack or 5 attacks with action surge. it really helps with chasing down enemies as well.
another fun thing you can do that I haven't seen anyone mention is that the time limit on how long it can be in the air is unlimited. So long as you don't make four attacks, it stays in the air, in which you can use it out of combat to look badass as hell. if you had like, six identical ones somehow, you could even replicate those anime characters that have blades behind them like violent wings. Think those BlazBlue characters with the greek letter names.
you would have to be an artificer to have six for the wing thing though.
