Chimpanzees, Gorillas and Orangutans are on different levels of power. This statblock is more on par with a silverback gorilla, a chimpanzee would likely be 1/4, and orangutans are weird, being inbetween the two as far as power goes, they'd probably be CR 1/3 but since that CR doesn't exist I'd probably lean towards 1/4. Orangutans are timid animals anyway, and the likelyhood of one actually picking a fight is slim

Being a druid, shape shifting to an ape og baboon, wouldn't that allow one to still use a simply light weapon (specifically thinking of two hand axes)? I am referring to the description of the shape shifting rule:
Objects. Your ability to handle objects is determined by the form’s limbs rather than your own. In addition, you choose whether your equipment falls in your space, merges into your new form, or is worn by it. Worn equipment functions as normal, but the DM decides whether it’s practical for the new form to wear a piece of equipment based on the creature’s size and shape. Your equipment doesn’t change size or shape to match the new form, and any equipment that the new form can’t wear must either fall to the ground or merge with the form. Equipment that merges with the form has no effect while you’re in that form.

I feel like what ape you encounter matters.
A Lar Gibbon should be either Small or Tiny, and probably have 5 or 10 feet of movement on the ground but like 60 climbing and a completely different stat spread and abilities focused on not getting hit, stealing stuff from the party, and maybe doing the occasional grapple and bite, and probably good saving throws because, you know, the whole flying through branches thing. But like 1d4 hitpoints. In sufficiently dense forest their climb should be usable as if it were fly speed.
A Siamang should be firmly within Small size like gnomes or halflings and basically just be a tankier version of the Lar Gibbon that gets to actually do more with its leaping grapple and bite instead of just being jungle gremlins that steal your stuff. 1d6+2 hitpoints sounds about right. Like, it's probably not killing anyone but we could give it a grapple that actually has more effect and potentially restrains your arms and give it like 1d4 damage.
Orangutan should be Medium. Probably stats pretty similar to this but maybe only a speed of 10 feet since they're really ungainly on the ground. However, their abilities would be entirely optimized for grapple and bite, grapple and drag, or occasionally throwing things or using wooden clubs. Maybe a separate Flanged Orangutan for representing large males.
Chimpanzee and Bonobo both Medium and basically just copy these stats but give them a grapple and a bite. They should also have a chance to use crude spears with reach.
Gorilla should be medium but probably even higher strength stat and a charge ability. Their climbing speed should be somewhat reduced and they should be given absolutely devastating bite.
