If you want there to be different colours then you can have different colours. You could have a great old ones blast be black, a archfiends one be red, a celestial's beam be white, and an archfeys be green

All of my friends know this as "nut shot Blast" because of what I did with my warlock to one of the bosses

As far as I know it's because it's D10 damage. Remember Cantrips are cast at will and don't take up a spell slot. It also upgrades at higher levels. Compare it to any other damaging cantrip in the game should highlight it's capacity for destruction.
It's 1d10 of force damage, there is almost nothing that resists that type, when coupled with a number of Eldritch Invocations (EI) you get your CHA modifier added to each beam. So at lvl 17 that's 4 times 1d10+5. There are also Invocations that slow/pull or push back the target. Each beam has a separate to hit roll so the chances of hitting are better than one roll. This means you also have more chance to crit and more chances to have the EI's trigger. And that's just the plain standard Eldritch Blast without any items or transformations. For non 'locks it's not as good by a long shot.

There are some other aspects of the spell, beyond raw 1d10 damage, which can make it slightly better than other options / comparable spells. And people get excited over these slight differences. Though some of the difference is people's preference based on common situations (so individual preference may vary). Compare Eldritch Blast to Fire Bolt
So it is not that this cantrip is super-good but, on average or in average play, it is noticeably better than the equivalent spell.
Problem is, normally you don't see that far away, except you target something Really big
Yeah, but normally you aren't able to discern if something is hostile in 600 ft distance or even be able to distinguish same sized humanoids well
And meteor swarm is more like "destroy everything in this area" and not "Headshot this single individual target"

But it would still be difficult to hit something specific from 600 ft

A normal bullet from a revolver could travel easily 600 ft
But trying to hit something with a bullet in 600 ft distance is something else
You can cast it at weddings
you can't twin spells that are able to target more then one creature so u can only twin eldritch blast as long as it's only one beam... but u can't twin the 4 beams to make it 8... sry
