Please read the Wizard's class features more carefully. The is no rule that limits the amount of learned spells for Wizards. A Wizard's spellbook comes with 6 spells by default, but you can learn more later on when you adventure.
At 1st level, you have a spellbook containing six 1st-level wizard spells of your choice.
This was a new character at 1st level and so I would have thought I would have been limited to 6 spells to add to my spellbook. I am limited to 3 cantrips because a 1st level wizard only knows 3 cantrips.

1st level and higher spells (but not cantrips) beyond a Wizard's "allotment" per level (6 at 1st level, 2 on each level up following) can be added to your spellbook if you 1) find a spell scroll or spellbooks and 2) take the time and spend the money to copy them into your spellbook. This is a (relatively) unique feature of wizards, although there are a few subclasses, sub-sub classes, or feats that provide a more limited ability to add spells to a book. Since DDB has no way of knowing when you find such a thing, or when you run across a wizard willing to share spells, the wizard character sheet allows you to add spells beyond the "automatic allotment."

Your mentor in your wizarding could have been nice and allowed you to copy free of charge all their first level spells. However, you can only prepare the number of spells it allows you to do so. So, if you loose that spell book, the only spells that you are going to know, are the spells you have prepared. Those prepared spells are the only spells you can write back into a new spell book.
Also, as ArwensDaughter pointed out, some subclasses get spells which are always prepared like Cantrips are, those spells will always been known to your character, even if you loose your spell book in someway.
