The only mention of beyond level 20 play is in the dmg, you dont gain levels, but instead become a sort of gods or several gods problem solvers, doing universe repair in exchange for boons that often make capstones look like a babies pacifier. Off the top of my head one option is to gain a boon after x-amount of xp, the other more likely is getting a boon for a job completed. (why reward the help half way through a job?) The material offers the idea that this marks the characters rise into the rank of the gods themselves.
Since there is now a toggle to turn off multiclass prerequisites (something I had never seen requested or mentioned in a rule book), maybe there can be a toggle to remove level cap (something that gets requested almost as often as homebrewed base classes, but easier to implement).

I’m not sure it’s that easy: there aren’t any rules for beyond level 20. How would DDB decide the XP thresholds for levels beyond 20? Or the class and subclass features?

I'll give you XP thresholds, though it could be made to require milestones beyond this point. Classes would still cap at 20 (if they ever add homebrew classes, we can homebrew prestige classes).
Like I said, it's not hard to implement. I always assumed they didn't add it because there were no rules for it in any books, but I don't remember seeing rules to forego multiclass prerequisites either.
