Would you say one could infuse a piece of ammo I.e. an Arrow for a longbow? A further example, an adamantine Arrow with Returning Weapon infusion (yes I know it does not have the thrown tag, but, it's an arrow...) so that the arrow could come back to you?
RAW, both adamantine and mithral armor or weapons considered magical, so they can’t be infused. I think a large proportion of DMs would be willing to allow an infusion on either, however, so long as the item wasn’t otherwise magical.
You may need a home brew infusion for a returning arrow, since the Returning Weapon infusion only works on thrown weapons RAW. But it’s not out of line with the existing infusions like Repeating Shot, so why not?
I probably wouldn't allow returning on ammunition as there's already an infusion that achieves that effect and allowing it to be put on ammunition would let players stack them.

Personally, I would rule it to allow for multiple though I'd tie it to your proficiency bonus or something like that. Having a single walloping arrow would feel extremely limiting (and likely a waste of an infusion slot), but being able to infuse all your ammunition would be far too powerful.

Sadly enought per RAW it is only 1 piece of ammunition.
Personally I don't see a big issue allowing an artifiier to infuse 1 quiver of arrows. There aren't that many infustions that would even work. Unless I'm missing something obvious, I can't think of any infustion that would be game breaking. Especially since you can't infuse magic items and you may only place 1 infusion per item (or quiver).
Unbreakable Arrow shouldn’t be broken (😏) because it’s worse than Repeating Shot. Enhanced Weapon on arrows isn’t much different than casting it on the bow.
Where you might have a problem is Walloping Ammunition. Knocking up to 12 targets prone per day at range is potentially abusable, even though the DC is only 10. That’s a common magic item, so it could be infused with Replicate Magic Item. I can imagine the Artificer just handing that quiver off to their Ranger, who is going to shoot arrows most of the time anyway, and now gets a potentially significant debuff.
I was honestlly thinking radiant weapon, but per the infusion it only allows 4/day.
As for walloping, why not. It slows the advance of enemies which is the same thing a bunch of 1st and 2nd level spells already do. Fog cloud (sometimes), spike growth, grease, dust devli, etc.

I don't see the harm in it unless adamantine stuff has properties I am unaware of.
