Am I missing something or is there no option to "touch one Simple or Martial weapon or one item that you can use as a Spellcasting Focus, and you store a spell in it". I can see the check box to say I've used the feature but no way to actually put it in an item so I can see and use it as part of my game play outside remembering what I've done. I've looked at the infusion area and other places. Have I missed it or is it just not there?

There's no direct support for that in D&D Beyond's character builder.
The easiest workaround is, I think, to just customize the name of the item in your inventory to indicate what spell is in it.
You can also create a homebrew magic item that includes the spell alongside whatever the item's normal properties are.

Yeah, I was going to homebrew it if there wasn't a baked in option.
