Does putting two levels into Cleric of Knowledge Channel Divinity stack with tools expertise? Is it worth it even if its just ten minutes? Though I think it would be funny having to lug almost every set of tools that isn't artisan tools if it did.
I can't see any reason why the wouldn't stack. Channel Divinity: Knowledge of the Ages gives proficiency, Tool Expertise doubles that proficiency.
Whether it's worth it or not is up to the player. Personally, i think between class/subclass/background/race it's possible to get proficiency with enough tools that I can't see it mattering. And with Right Tool for the Job...who needs to lug around anything?
The Channel Divinity ability of the Forge domain cleric is well worth the dip. I am debating creating a new artificer when the chance comes up that will go Artificer (Battle smith), Cleric 2 (Forge domain), Wizard 2 (Conjuration). He would be a variant human with Keen Mind. I can seen many potential ideas with this combo in the long run.

Correct me if I'm wrong but you can train into tools right? So I think I'd rather train up into tool profiencies. Assuming you have the gold and downtime
That said. I still really hope they make an Infusion later on, that lets you gain profiency in tools on command, even if it takes 10mins for prof and 1hr for new tool creation. (but I'm the sort who wishes the lv 3 Right tool foro the job, gave you 1/2profiency in the tool you make)
I know you can get proficiency after a year of training but I dont know of any group who has used that option. As for skills yeah but I thought it would be more fun to be proficient at all tools once a day, unless the dm allows to take skills more then once.

There is always the feat Skilled: 3 skills and/or tools.
