Could a Bladesinger 6, Eldritch Knight 14 do the following:
Weapon Attack, Weapon Attack, Bladesinger's replace an attack with a cantrip, TRIGGER: War Magic - Bonus Action Weapon Attack?
Or am I misunderstanding the rules between those interactions?
No.
Replacing an attack with a cantrip only works with the Bladesinger extra attack feature you get at level 6. The 11th level extra attack fighter feature is a different feature and the bladesinger ability to replace an attack with a cantrip does not work with that feature.
What you could do with a bladesinger6 EK7:
Attack, Cantrip then attack as a bonus action using war magic.
Attack, Cantrip then attack as a bonus action using war magic.
Or Attack, Cantrip, Action Surge, Attack, Cantrip, then Attack as a bonus action. So it's still a very potent combo when you need to deal a lot of damage in a round, especially with a SCAGtrip like green-flame blade, and if you can get advantage somehow (e.g- faerie fire from yourself or an ally) or even by using shadow blade (if your DM allows it for SCAGtrips, as RAW it shouldn't) it can be a brutal combination, especially when you can be pretty close to impossible to hit back while bladesinging.

Because they are two different distinct abilities. The multiclass rules spell this out specifically where it says you can no stack extra attack from two classes.
Yeah, basically you have two different features called "Extra Attack", so it might be easier to think of them as Extra Attack (Fighter) and Extra Attack (Bladesinger); one of these lets you make three normal attacks, while the other one lets you make two normal attacks, or one plus a cantrip.
When you're deciding what to do with your Attack action you need to pick which of these features to use.
While having that flexibility is interesting, I personally probably wouldn't go that high into Fighter as 7th-level in Eldritch Knight gives you the bonus action attack, and there's not much above it that you really need; Eldritch Strike is quite good, but I wouldn't go higher for it unless there's a spell you'd really like to combine it with, 7th-level is probably going to be plenty, as it still lets you get an odd number of levels in Bladesinger (as the odd levels are when spell slot size/spell level increases). On the other hand, more levels in Fighter does mean more hit-points, so balance with what you want, or more importantly what makes most sense for the character.
