You probably have some errant code in there gumming up the display. At the top of the description field, look for the little button that has this symbol: </> That will let you see the html. Get rid of anything that doesn’t look like one of these:

</p>
If you see anything looks like this: <p “whatever:whatever”>, then turn it into one of the first ones (<p>).
This is the only magic item i've created that I see this behavior with so far but the text for this item appears black when viewed from dark mode: https://www.dndbeyond.com/magic-items/3718744-blinsky-elixir
It appears fine on a white background and can be viewed when highlighted but obviously isn't ideal.
