I just noticed today, I believe the monk martial arts damage die (shown in the Martial Arts section of monk features) is calculated based off total character level instead of monk level. For example, my monk 6/cleric 9 shows "Martial Arts (d8)". It should be a d6.
Well, it shows a d6 now but didn't this morning... in fact, I still have an old tab from this morning and I can confirm it says d8, new tab says d6. Weird!
I am having a similar problem to this one. Right now have a level 3 rogue, level 2 monk. It is still calculating unarmed strikes like their based on strength instead of dex. not sure how to fix it
(Edited, realized i had armor equipped to the character which was throwing it off!)

I just tested it with a Monk 6 / Cleric 14 and it shows the correct damage die (1d6) for unarmed combat.
Can you provide a link to your character please, so that a moderator can take a look?
