Was just creating a Monk and it doesn't appear that you can select to use Dex or Str for your weapon based on the Class 'Martial Arts' rule.
You can use Dexterity instead of Strength for the attack and damage rolls of your unarmed strikes and monk weapons.
e.g. I selected a Quarterstaff as my weapon and on my character sheet its showing my +Str mod rather than my +Dex mod (which is higher so I'd use that).
I am making an assumption that a "Monk Weapon" refers to (a) a shortsword or (b) any simple weapon which is what the class can use.
Just about to post this, so glad you did. Yeah, made a monk with a quarterstaff, and the character sheet said my attack was +3 (+1 Strength +2 {Proficiency) rather than +5 (+3 Dex + Prof).
