My gnome has a mastiff for a mount and letting him attack things requires manual roles or a janky scimitar of biting that i customed. The issue could be fixed by allowing a roll without selecting any stat and allowing a custom override for the attack but currently I have to pick a stat then enter a negative number for the adjustment . If there is a better way to set this up i apologize but this was the only work around I could find so far.
This post has potentially manipulated dice roll results.
It would be nice for statblocks added to the sheet via Extras tab to be rollable using the sheet dice roller and that will probably happen in future. It's a low priority though because you can achieve the same thing in multiple different ways, already. In no particular order:
You can use the manual roller on the sheet. You can add the statblock using extras to see the stats easily and to track HP and such. You can roll the dice manually and then add the modifier. For example the Mastiff's attack bonus is +3, so you could just roll 1d20 on the sheet and apply 3. So say you got a 15, add 3 makes it 18 to attack. It's no different than rolling physical dice, do the inconvenience of doing the mental math shouldn't really be that big of a deal.
You can use the Encounter builder. A DM can run the encounter using the encounter builder to track combat initiative, number of turns, add monster statblocks to track their init and health and can even add custom entries such as for Lair Actions. Adding a monster statblock lets them roll the dice for it much like a character sheet. The DM could add the Mastiff for you, for instance. The only downside is that the DM would be the one clicking to roll the dice for you - but the dice are viewable for everyone in the campaign game log.
You can create a new character sheet - selecting any random race, class, etc and not bothering to fill in anything else. Set the stats to the mastiffs and add custom actions to match the attack, and now you have a sheet for the mount with health, rollable attacks, and so on. You'd have to have both sheets open (yours and mastiff's) but this is simple enough. You can control many characters in a campaign so even the mastiff's rolls can go into the campaign game log.
If you are on Discord you can use manual rolls using the Avrae bot. The bot can even link to your sheet for your own character rolls and tracking too.
If you use a VTT like Foundry, Roll20, etc, you can use manual rolls, create the sheet on there, or just use the Beyond20 browser extension which makes the Extras statblock have clickable rolls that will display in the VTT.
If you play PbP on the forums just use the forum dice roller (in the icons above the box where you type at the far right is a black die with 3 white dots. Click this for the roller, or just use basic command like
[roll]1d20+3[/roll]
to roll it, e.g. 11).

I will add that this is problem is bad for rangers and at least a small portion of the reason some people don't play beastmasters. This is one of the issues that has existed since day 1. no matter how people feel about the new options, this is basically core PHb content that has been avoided in fixing. I understand the stat blocks are programed special and it may be difficult to implement but there should be better ways even if its just a custom roll near the HP tracking on the extras tab.
