I know you said no feats, but that's just begging for Resilient (Wis).

Strengths: You'll be effective with any weapon. You'll be very good at physical ability checks and saving throws, except Dex saves, which you'll just be good at. You'll have a high AC, high HP, and a quite respectable damage output. You'll have a high initiative bonus (+8 by 19th level).
Weaknesses: You won't be as good with any given weapon as a feat-using fighter, paladin, or ranger specializing in that weapon. You'll be very bad at mental ability checks and saving throws, but not as bad as my 4-Int barbarian is at Int checks and saves. You probably won't be as hard to kill as someone who specializes in being hard to kill, but then again, you might, so don't count this sentence. There are definitely builds that do more damage than you will. You don't have access to any way of knocking your opponents prone without using up one or more attacks. Improved Critical isn't very good, at least according to a skilled min-maxer I sort of know.
Summary: You're a generalist, not a specialist, except that you're specializing in weapon use in general. You're no variant human Battle Master, but you should be decent. I probably missed several important things, but it's late, I'm almost tired, and I feel obliged to finish this tonight.

I tried doing a test run with the crossbow, but the two handed property of the ranged weapons are too much. In combat, I would have to waste a turn switching from bow to sword and shield since the shield is one action to don/doff :/ The handaxe can be used without wasting a turn, at least that's how my DM says it'll work since its one handed and switching between the sword and handaxe should just use up the free action.
I really don't mind not having high stealth if it means more armor like splint and plate.

It should be two object interactions (one to put the sword away, another to draw the axe) unless you drop the sword on the ground (doesn't cost anything.) But hey, if your DM will let you switch at the cost of one interaction, that's great.
Your main weakness is that the Champion subclass is really bad. All of its combat features are underwhelming until Survivor at 18th level. 1 extra crit every 20 attack rolls doesn't compensate for the great 3rd level class features you'd get from other subclasses. Remarkable Athlete comes too late to be super useful for exploration (spellcasters already have 4th level spells.) Most Fighting Styles are mutually exclusive, so the best case scenario is combining Armor with anything else or Dueling + Protection, but Cavaliers are way better at tanking if that's your angle.
If you want something super simple, consider Samurai. Purple Dragon Knight can be useful if your party is really low on healing. If you don't mind a bit more complexity, Battle Master and Cavalier are also great choices.

Why max dex when Chain mail wont give you any +AC from dex when wearing it? Just wondering....
I was torn with what to do with my remaining stat points. Dex saves are nice and the initiative bonus is good too.
Swapping out for a breastplate as soon as you can will cut back your weight and remove the disadvantage on stealth, while keeping your AC the same.
Also I'd grab a bow as soon as possible it will increase your threat range and your Dex is only slightly lower than your Str.
