Your character isn't very physically strong, so you can't haul all that stuff easily. Realistically, though, a lot of that stuff isn't stuff you'd need to be carrying all the time. Get a wagon, and throw your rations and torches in there. You don't need to carry 20 pounds of food everywhere you go.
Items in Equipment contribute to total weight even if they're unchecked for being equipped.
Either way, your character is going to be encumbered with 50lbs and highly encumbered with 100lbs of carry weight, so that's something you'll need to work out.

So, at 5x your Str (5x10=50) in lbs, you become lightly encumbered, which means you lose 10ft of speed (RAW). If you get it below 50lbs, you're good. At 10x Str (100) you get disadvantage on certain ability checks and then the limit is 15x (150 for you). So lose 30.6lbs and you'll be fine

An ability score of 10 is "average" which I would say describes a typical white collar person who doesn't work out or regularly do anything physically taxing. Try wearing 20 pounds of weighted clothing and walking around all day with a backpack full of 60 pounds of weights and tell me that isn't going to slow you down. Because if it doesn't then your strength score would be better than 10. Real world military recruits regularly march and/or run for miles at a time carrying heavy packs as a standard part of basic training specifically to build up strength and endurance (along with a lot of other intensive physical training) so they can carry all the gear they need to be [theoretically] fully prepared and equipped in field conditions.
For game terms, if you want to carry more stuff without penalty then don't make strength a dump stat. It's actually used for stuff. Yes, being stronger would come at the cost of being better at other things. Having tradeoffs like that is a fundamental part of the game. That's why there are six different ability scores instead of just one that you automatically get a big number to put into.

No, lightly encumbered is at 5x, heavily encumbered at 10x and over encumbered at 10x. Since you're at 8x Str, you're lightly encumbered (RAW), so you just lose 10ft speed. Speed is one of those things that you can go through an entire game at a reduced value without it being even noticeable - but if a situation ever comes up where you need it, you NEED it and that loss of 10ft can get you killed. For example, running away from a monster. It's a gamble.

With most things regarding inventory, you should be able to just use your intuition. In this case, you can only drop them all at once if they're bundled together, usually by being in a bag. If you're carrying this bag in your hands, you can drop it without needing to use an action. If it's a backpack, most DMs will probably let you do it as your "free object interaction" (not a game term, but a common shorthand), or maybe an action, especially if it's fastened in a strange way or you're also wielding a shield or something that would make it more difficult.
Give heavier items to another character (the rope. for example). I would ditch one of the ranged weapons and one of the melee weapons, just keep one of each on your person. You could ask another player to hold onto them for you, put them on a cart (if you have one) or discuss with your DM about selling them prior to starting to make back some gold.

If it's delicate, you do run the risk of damaging it, though. So you could grab a quiver (with 20 arrows in it) and drop on the floor. You can't grab two loose arrows out of it and drop those on the floor, though. I can't remember if it's RAW, but usually you can exchange an action to grab a second item. Some DMs may allow you to use a Bonuse Action instead or something, but that's certainly not RAW.

I chose to bring a dungeoners backpack... not realizing there was no bed roll in it. So you are saying I should choose the explorers pack instead then?
Also, on that part of the character sheet, it says starting equipment or gold.
That means I either pick starting EQ, or take gold instead, right?

Even if I drop the torches (I have darkvision) and the rations (I have goodberry) I am still encumbered after dropping this 30lbs

Hmm... Just seemed a bit weird to be disadvantaged right off the bat.
If I remove all torches (10lbs) and rations (20lbs) I am still encumbered.
I dont even have bolts for my crossbow yet either, lol
Seems like I am going to have to drop either my dagger or handaxe too because I want to keep my longbow and crossbow.
