The build references are the norm but it doesn't mean they all follow such tendencies tightly. If its something you'd prefer you can always limit their height in your campaign.

That said, I think your advice is ordered backward: DMs should first try pretty hard to defer to the player when it comes to these aspects of character design. It's normally a positive thing for PCs to be a little extraordinary. If the issue is immersion, the DM should think hard about whether it's really important to their world experience that elves are a little shorter than that. Sure, you can work on justifying it with the player, but the default should be "yes" and the process collaborative. If the players wants there to be an enclave of tallish elves in the world, try to find a place for them! If the issue is that the height is part of a pattern of min-maxing, focus on some other aspect of the character build - a few extra inches of jumping and the ability to reach the top shelf isn't going to break anything.
So I have a issue going on right now. We just finished our 10th session and we were all talking about heights. This is where I just found out our high elf is 6'6in. If you have not guessed this is out of the races height bounderys, and there isnt anything in there story that would or could change that. I tend to play my games in a vanilia fashion so we are not going to see a 5'11 dwarf or a 2'1 human so I need another opinion on this.
Should I ask them to change it to something more reasonable? (Its the first time it has been brought up so its not going to change much.)

p.s I have a player where this is there biggest pet peve in dnd and I agree.
Does it really matter? What’s the issue? How does the character’s height impact on realism when people are climbing cliffs in platemail or throwing around magical lightning bolts or turning into bears?
I don't think I noticed or mentioned before, but I see it is only 6' 6" you are talking about. So far as lore goes, in the Forgotten Realms books, specifically the Last Mythal trilogy, the main character is an elf and I am all but certain he is over 6' and not seen as a freak in Evermeet. I'd say there's no issue with the character fitting in with the existing lore.

I think it makes sence as the humanoid counterpart for i think all dnd races are at least a good foot higher well, idk about tabaxi
