Just wrapped a Session 0 and my players asked if I could hide their HP from my view via the DNDBeyond Encounter Builder. Their logic was not wanting me to meta game with it. For example, using Power Word Kill. I don't mind doing this and wanted to see if there was a way.

No. If your players need this to happen, they should keep separate tallies of their HP and not update them on the sheet.
I just wait till a character is “bloodied” (4th Ed condition for half HP or lower). I use this condition in my 5E games to let them know when an NPC is bloodied. The encounter builder will change the color of the characters HP to red when they are half or lower HP. This way I don’t metagame use of spells like Power Word Kill.
