I have a Zariel tiefling named Wrath in one quest as a vengence paladin. I reflavored all his healing and everything to "The fires of life" and appeals to both aspects of Zariel - the holy as a angel, and the unholy as an archdevil. Both mix very well into a character who's flaw is - wait for it- wrath.
Tempest Cleric with a Charlatan background. Was raised by a guild of con artists who used her to help them earn more money. She was attacked by a member of the guild and was saved when lightning struck a tree and a branch fell on him. So she dedicated her life to the God of Thunder, carved that tree branch into a staff and ran away. When she left she stole the money she had earned the guild and gave it away and used her skills to create herself a new identity which is what she goes by as she travels, hiring herself out as a healer and donating most of what she earns to orphanages. They are definitely after her.
Tabaxi Fighter with Arcane abilities and sticky fingers. She's also easily distracted with a ball of yarn or a shiny object. When she walks through a tavern, she burgles every single person she walks by. I've picked up some rather interesting artifacts that way. :)
Halfling warlock - Fey patron, pact of the tome. Instead of a traditional spell tome, she uses a deck of cards. (mechanically the same). The daughter of the village mayor, she lost an invaluable artifact due to a serious gambling addiction. She was 'found' by her soon-to-be-patron half-starving in the woods, with a promise of turning her fortune around in exchange for her servitude - finding that her particular vice is quite encouraged.
This is more of a silly character concept but I guess you can make a serious character with it: Human Bard named Alexa.
The basics: Players can ask, "Hey Alexa, play -insert song name-" and you can perform your heart out playing said song.
The long game: Using the Sage background is a good start to becoming a well of knowledge on History, Arcana, and Religion. Being that this is super not a min/max character go for the human variant build and select the Prodigy feat for bigger bonuses to your skills. And watch your character build into one very well knowledgeable individual who knows the answer to just about everything. As for spells, go for utility, things like comprehend languages, identify, enhance ability, tongues, legend lore, etc. In the end, there is nothing Alexa won't know about.
My sister played an owlbear very briefly. His name was Owelbeart Einstein, and he was a professor at a school in some Elven country. CHA 19 allowed her to fake being able to speak and teach, but eventually she decided to leave teaching for the adventuring life.

A gnomish merchant who sells boxes for shipping other boxes. Functionally he's a conjuration wizard but only uses spells that involving moving things, putting things inside other things or protecting things as they move.
This is a friend of mine's character, but I'm a huge fan of him. This was originally for a high-level one-shot, but he shows up in other places sometimes. Rather than making a full backstory on how this Cleric got to such a high level, my friend made this character a minor god of porcelain dishes and rap music from a different dimension who was thrown out out by the other gods. Naturally, he lost some of his abilities and power when this happened, but now that he is in this dimension, he takes over the body of a local mob boss and leaves the mob to go around making this world a better place.

Bugbear charlatan alchemist artificer - basically a snake oil salesman who actually is pretty good with potions if you treat him right.

Wanted to test two players playing as conjoined twins with separate classes, but shared health pool. Hit Die would change between the two per level.

-Ancestral Guardian Barbarian who is occasionally possessed
-College of Swords Bard who wants to usurp all governments
-Forge Domain Cleric who is building a gigantic vessel for their god
-Circle of the Spores Druid that creates cults worshipping Zuggtmoy
-Gunslinger Fighter who wants to kill all others with the secret of gunmanship
-Way of the Shadow Monk on a quest to kill the other members of their now-disbanded monastery
-Oath of Redemption Paladin who is bloodthirsty despite their oath of pacifism, and eggs on people into fights so he can massacre them
-Horizon Walker Ranger unwittingly cursed by an Elder Evil, and is attempting to track down himself to eliminate the threat.
-Thief Rogue that’s a pacifist and only steals
-Shadow Soul Sorcerer attempting to kill their ancestor to redeem themselves
-Great Old One Warlock that is insane and thinks they are a cleric, and their “healing” causes psychic damage
