Hi all, a few important questions to discuss with!
Thought Form 6th-level Psionics feature While you are carrying your psionic focus, you can use a bonus action to magically transform your body into pure psionic energy. The transformation lasts for 10 minutes, until you use a bonus action to assume your normal form, or until you are incapacitated or die. While in thought form, you are a figure of luminous psychic energy, with your psionic focus hovering within. Your form can appear as anything you wish, but it is obviously magical, is the same size as you, and sheds dim light in a 5- foot-radius. Any other equipment you are wearing or carrying transforms with you and melds into your thought form. You also gain the following benefits: Psionic Spellcasting. When you cast a spell while in thought form, you can cast the spell psionically. If you do so, the spell doesn’t require verbal, somatic, or material components that lack a gold cost.
A DM friend of mine made a point to say, if such is the case, would that not be really hard for an NPC to even detect said spell without some psionic abilities? The idea here is that they very likely won't see the spell coming and thusly making any attempts to counterspell it, fairly meta.

The counterspell spell specifies that the reaction may only be taken "when you see a creature within 60 feet of you casting a spell"
If you are unable to see the creature casting the spell, or are unable to detect that it is casting a spell, then I agree - it is not possible to use a reaction to cast counterspell.

The key bit there is that you deal psychic or force damage with a wizard spell. Eldritch Blast is not a wizard spell (not normally anyway and the subclass doesn't appear to give it to you as a wizard spell) so you wouldn't be able to stack both your Int and Cha on it.

Yeah. If you cast a spell with no components then it can't be counterspelled as the creature isn't aware. It's actually addressed in the Sage Advice stuff under Sorcerer Features as they deal with subtle spell which removes Somatic and Verbal components. (that links the closest I could seem to get to it. Just scroll down a little)

It’s no cheaper than subtle spell. Being uncounterable is one of the biggest benefits of being able to cast without components. It’s what makes it a valuable feature.
This is decidedly cheaper than subtle spell for two reasons:
It affects material components, subtle spell does not. It allows you to subtle cast all spells
It has no per-spell cost, you just need to be in you psionic form. Subtle spell requires you to expend metamagic.
Being able to effectively subtle spell almost all spells with no per-spell cost is pretty hefty.
Note that if you use a focus, you do not need to do anything beyond hold a focus in your hand to cast a subtle spell. There is no movement or sound required. There is a per spell requirement to use subtle spell that is absent from the psonic wizard's ability, but they're not meant to be apples to apples. The Thought Form has other limitations... specifically that it may be hard to access your equipment, including valuable spell components, while in this shape, you generate light (making stealth very hard), and you need to use a bonus action to take the form. If you want to e the spellcaster that is a silent assassin, walking into a bar and killing without a clue... the psionic wizard is not the best choice.

I think the fact that you can't casually use psionic spellcasting in social encounters without turning into a glowing mass of energy (and all the lack in versatility that implies) balances it against subtle spell pretty well.
