Undead Fortitude. If damage reduces the zombie to 0 hit points, it must make a Constitution saving throw with a DC of 5 + the damage taken, unless the damage is radiant or from a critical hit. On a success, the zombie drops to 1 hit point instead.
I was wondering about the damage taken portion. I interpreted remaining damage after zombie was reduced to O hp would be the addition modifier. Such as: Zombie with 2 hp takes 10 damage so for the saving throw it would be DC 5 + 8 for it to remain standing or would it be DC 5 + 10, taking the whole amount of the attack that "killed" it.
It seems if it is taken the second way the Undead Fortitude would not be much of a factor.
"The damage taken" is just that, the total damage taken from the attack that reduced it to 0. A zombie at 2/8 and a zombie at 8/8 that both take 10 damage would both have to make a DC 15 (5 + 10) Con save as the damage taken is 10.

Using the amount of damage that is in excess of reducing the zombie to 0 hp could definitely force a low damage output group into trying to put the zombie down 2 or 3 times in a row. If you do the Con save based on the second method, just increase the number of zombies if it's important to you for some of the zombies to resist going down right away. I did notice that zombies get +3 to their Con saves so, they could take pretty big hits and still stay up.
