Gorgon, monster figure in Greek mythology. Homer spoke of a single Gorgon—a monster of the underworld. The later Greek poet Hesiod increased the number of Gorgons to three—Stheno (the Mighty), Euryale (the Far Springer), and Medusa (the Queen)—and made them the daughters of the sea god Phorcys and of his sister-wife Ceto. The Attic tradition regarded the Gorgon as a monster produced by Gaea, the personification of Earth, to aid her sons against the gods.
In early classical art the Gorgons were portrayed as winged female creatures; their hair consisted of snakes, and they were round-faced, flat-nosed, with tongues lolling out and with large projecting teeth. Medusa—who in later art is depicted as beautiful although deadly—was the only one of the three who was mortal; hence, Perseus was able to kill her by cutting off her head. From the blood that ran from her neck sprang Chrysaor and Pegasus, her two offspring by Poseidon. Medusa’s severed head had the power of turning all who looked upon it into stone. Carved masks of the hideously grotesque type of the Gorgon’s head were used as a protection against the evil eye.
How it became a metalic bull in D&D lore, I am unsure, but it also in Magic the Gathering lore, Gorgons are just the base racial name of the medusa monsters.
The medusas of Ravnica, often called gorgons, are a monstrous race of creatures that appear superficially similar to human women. In place of hair, a gorgon has a writhing mass of black, serpentine cables, and its hands are scaly claws.
The gaze of a medusa’s glowing eyes causes living tissue to petrify. The transformation is rapid, leaving the victim as a stone statue, usually frozen in a position of abject fear or agony — a fine trophy for the medusa’s macabre collection. The medusa must exert its will to effect this transformation, so the gaze of a surprised or friendly Ravnican medusa is harmless.
This deadly gaze attack gives medusas a degree of power among the Golgari that is out of proportion with their small numbers. Medusas command a significant share of the guild’s smaller cells around Ravnica, and at least one medusa is thought to be angling for control of the entire guild at the moment.
Not all gorgons are so ambitious; some prefer to simply stalk the endless shadows of the undercity like hungry predators.

in D&D Gorgons are Bull-like creatures with metallic plates covering them, as depicted in your link.
In Greek Myth Gorgons are snake haired women with a petrifying gaze, Medusa being the most famous example. The same creature is simply called a Medusa in D&D.
It's been that way since the first monster manual in 1977. I've personally always associated the term Gorgons with the snake-haired women, and just accepted the D&D Gorgons as something else, and referred to them as Khalkotauroi, which is the Greek myth version of a similar looking creature.
I've always thought of Gorgons as being Gary's take on the Brazen Bull torture. One fun thing you can do for an encounter is to have the party find a long dead and rusted Gorgon, partially decomposed. As the party moves in they find a mated pair of rust monsters - bye bye armor and weapons. Have baby rust monster eggs hatch in the gorgon and attack as minions as the party leave for more fun.

It says right there in the description that the oils from its body lubricate the metal plates, and sick or inactive gorgons get something akin to rust/mange/fungal infections. So it's an organic creature that's plated (whether by magical nature or magical intervention is probably your or your game world's call).
