1. What should we be keeping track of? I'm learning this on the fly from our adventures to date, but I'm guessing it's our responsibility to determine or keep track of: - Our equipment, loot, etc. - Whether we are hit or not by an enemy attack - Our hit points, and when we hit 0 ... I'm sure there's other stuff, too (spell slots, etc.) But am I accurate so far? What important stuff did I miss?
2. Also a specific question about my character class... When will Sneak Attack become available to me, as a Rogue?

That seems to be all you should be keeping track of. If it's on your sheet, track it. When you're hit, adjust HP.
Sneak attack is a level 1 perk.
Beginning at 1st level, you know how to strike subtly and exploit a foe’s distraction. Once per turn, you can deal an extra 1d6 damage to one creature you hit with an attack if you have advantage on the attack roll. The attack must use a finesse or a ranged weapon.
You don’t need advantage on the attack roll if another enemy of the target is within 5 feet of it, that enemy isn’t incapacitated, and you don’t have disadvantage on the attack roll.
The amount of the extra damage increases as you gain levels in this class, as shown in the Sneak Attack column of the Rogue table.
Pops (Some questions, at the risk of posting out of turn...
Is the bridge wooden? How is it attached to the wall? Are their guard rails? Can the bridge be easily detached from the wall, or the guardrails removed? Can the bridge be set ablaze with a flask of oil?
Pops glances around quickly, considering fast and silent ways to booby-trap or obstruct the bridge. (Ball bearings and a missing rail? String trip-wire?)
Has the water subsided yet? How high is the bridge above the water?

I’m not sure we can take this fight alone.” Ny looks to Petros and Pops. “What ever you decide I am with you.” Nyana stands at the ready. Prepared to fight or follow back through the cave.

What sort ready action would you like to take?
Sometimes you want to get the jump on a foe or wait for a particular circumstance before you act. To do so, you can take the Ready action on your turn, which lets you act using your reaction before the start of your next turn. First, you decide what perceivable circumstance will trigger your reaction. Then, you choose the action you will take in response to that trigger, or you choose to move up to your speed in response to it. Examples include "If the cultist steps on the trapdoor, I'll pull the lever that opens it," and "If the goblin steps next to me, I move away." When the trigger occurs, you can either take your reaction right after the trigger finishes or ignore the trigger. Remember that you can take only one reaction per round.
Pops mutters quietly to Nyana and Petros, "Maybe we can drop down from the bridge, or circle around through that northern exit. We'll see if this corridor will take us to the others. I'd rather not go back down that blasted hole. But right now I'm a little concerned about the voices down this western tunnel."

When you ready an action, it means you ready an action to happen when a trigger is tripped. See above.
While there is no immediate threat or combat, we're going to remain in the initiative because the group is so scattered and you may be in more combat here soon.

He climbs onto the path and heads south. "Let's see what happened to those two knuckleheads," he mutters to no one in particular.
